Just a suggestion, you guys could also feature restaurants near universities, and asked them about how the pandemic affected them or pushed them to look for ways to get more customers (since they don't have students to buy their products anymore). Hi Erwan, just to share, my mom once experimented on using white wine vinegar for the paksiw. Turned out surprisingly well. It has been the most flavourful paksiw I've tasted up to date.

If you bought a new clay pot for cooking, its important that you have to fill it in with water and bring it to bowl for a while... then throw away/discard the water and thats when you can start using the clay pot for cooking. Otherwise if not, your meal will taste like clay/soil

I used to hate Paksiw until I learned simple tweaks on how some people prepare and eat it. Putting a little vegetable oil while the Paksiw is boiling levels up the umami flavor. To neutralize the sourness when eating, which also levels up (several levels) of deliciousness, use a dipping sauce made up of Bagoong Isda with smashed Banana Chili (used in cooking). This way I am likely to eat Paksiw with a mountain of rice or until my stomach aches. I am getting hungry now. LOL

Me, too. I like my bangus very very ckean inside. And with ala pobre, I like it boneless. Actually, I also cook boneless bangus paksiw though its cut is from a daing na bangus boneless or sonetimes just the boneless bangus bellies.

I love milkfish. I never thought about putting bay leaves and peppers in the paksiw na bangus. I will try your recipe since the ingredients are easy to find here where I am. Bitter gourd is off the table. I will stick with my eggplant and pechay or bokchoy. Thanks for sharing your ideas.

Too much water Bro. You should reduce till its a bit thick and oily. You forgot to add Ampalaya and Talong and 2 tbsp of virgin coconut oil.

You can include the organs while cooking paksiw it's more fatty and oily very yummy you just need to remove the "apdo" if you know where it's located that's the reason why it will taste bitter.
