Malcom is my hero. He taught me how to 'bbq right'! His comp. rib recipe is something I've now mastered and it continues to earn me accolades with family and friends. Just bought a Traeger pro 780 and this was the first cook I did on it. Did close to double this amount for my daughters birthday party and followed the recipe as close as I could. Got a ton of compliments and there wasn’t a bit left over. Awesome stuff as always! Best in KZbin!!!

I’m a California girl born and raised. I’ve had a few different men who claim to be bbq kings. Although the best BBQ I ever had was a southern boy from Georgia. AMAZING bbq man. Those southern men know their way around a grill and smoker.

Everyone out there.. Just keep it simple.... and do what Malcolm does. I run my trusty Weber performer and a Traeger Pro 780 for large, long lazy cooks. I made this yesterday on my WSM and the chicken came out wonderful. I just used the AP and BBQ Rubs to season two whole chickens, cut up. I did everything else just like the recipe and the chicken was perfect - terrific smoky flavor and very tender and juicy. I was generous with the mop, but I still had about 2 cups left, so I put it in a ziptop bag in the freezer. I will use it as a marinade when I'm cooking a smaller meal.

Smoking is a great way to diet. You don't have to add a lot of fat. Just use skinless chicken and sugar free sauce. Also, do a vinegar slaw or replace mayo with yogurt.

@@TheVoice010 Honesty this mopping sauce is one of the best kept secrets in BBQ'ing. Its really more or less a tenderizer to keep it moist and it adds some flavor. But it's definitely not masking anything at all, it just brings the flavors out more. It's a lot different than slathering it with a thick sugary sauce every half hour. I always do my chicken this way, highly recommend!
