I always do the cornstarch my wings with plenty of seasoning. I make my own pineapple buffalo sauce, just equal parts Frank's red hot and unsalted butter, a little crushed pineapple and the juice from the can made into a slurry with some cornstarch. It's also awesome on shrimp!

Ran this recipe last night. I think you need about 1/2 a cup of cornflour (cornstarch) per kg (approx 2lb) of wings. And definitely shake off the excess as much as you can. Don't be cheap with the seasoning, you need a lot with the cornstarch. Mine took a little longer, it is amazing how much the ambient outside temp affects the grill temp. It was barely 6 deg C (40F) when i cooked these and i struggled to get the pit past 200C (400F) with a vortex full of Heat Beads and a chunk of Pecan. Definitely a winner, and pretty easy to do. Love your work Malcolm, you're a legend!!!

Watched this video once and then tried the corn starch way with a little extra seasoning and my wife loved them. Been doing the crispy wings for a while now. I spice the cornstarch liberally then toss them in the wing sauce and put them back on the grill and set the sauce. Really enjoy your channel and recipes.

Try spraying the the cornstarch wings with some canola oil for an even crisper wing. I normally spray and then flip. Your AP rub is excellent for the breaded wings. The bbq rub doesn't have enough salt content for the breaded.

Thanks very much for posting! I used the corn starch on my wings for the 2022 Super bowl. My test with the two types worked well and provided enough evidence to use corn starch HOWEVER if the wings are not going to be eaten immediately, then this might not be the best version. Once the wings sit in the sauce (> one hour), the coating tends to slid off. Still were delicious and our guest enjoyed them immensely but i would make with corn starch only if going to be consumed immediately.

Malcom, I know this video is from a couple of years ago but I just stumbled upon it a couple of days ago. As luck would have it, I have a Weber Kettle and a vortex. We used your cooking technique and my wife and I were totally blown away. I believe these were the best wings I've ever had. We had two bags of Bob's Red Mill potato starch and I used that in place of corn starch. Add a little Cajun Shake and the rest is history. Thank you so much for all you do!

I have found that if you mix the hot sauce with the wings, the crispiness disappears after 5 minutes or so. I prefer to DIP my crunchy wing into the sauce then eat it, it maintains the crisp with the added flavor of the sauce.

I bought this as my first propane grill. It's been a fun, learning experience kzbin.infoUgkxCx5fHawkK9OoV-ojFrY8JLnZrFwAmvUt . I think it's a bit too pricey after looking at other grills, but it wasn't hard to put together and it works really well. I love the side burner option for heating food during a power outage. I have an electric stove and live in the South (Hurricane season), so this was a bonus. I also bought a cover for it and it has protected it nicely (the Char Broil All-Season Grill Cover 3-4 Burner: Large). Every few grill sessions, I take the rack (or grate) and burner covers off and clean them with a non-abrasive scrubby and mild soap. I wipe the excess off of the bottom as well, taking care to avoid the gas and pilot lines.

100%! Baking powder is key! Here’s my little tip. Buy your wings a day before and put them in the fridge uncovered to dehydrate slightly overnight. Toss them in a little baking powder & seasoning, then into the kitchen oven at 110°c/230°f for an hour to render. Meanwhile have your grill / smoker blazing outside at 220°c/430°f and get them in there for 30-40mins to finish. I only ever toss in hot sauce as I eat them, never before, ruins that Insane crisp!

I finally had a chance to make these. I won’t ever go back to my old method of making party wings/hot wings. These came out perfect! I did them exactly the same only on my Traeger so I ended up increasing the cook time a little. Malcom, you have made me a better cook/griller/bbq maker. Thank you!!

I follow so many of Malcolm's recipes. Just smoked some ribs and wings earlier this week and vacuumed sealed. Thawing them tomorrow to take up to hotel for Browns/Steelers Thursday night post-game smash. The crock pot will be warming while I'm at the game. Can't wait to smell that sweet BBQ aroma when I enter the room. Never done this before, and I don't understand why...

Gonna try this today. I've been using variations on your recipes all year and haven't been disappointed yet. I love crunchy wings, but I love the flavor of smoked wings. I'll probably do mine in a sweet bbq seasoning to add a contrast to the applewood pellets I'm using.

Another good tip is leaving the wings uncovered in the fridge to dry out the skin.

You don't really need to do that with the vortex. One thing I will add that I think malcolm didn't do is use a charcoal chimney to get your coals going then pour them in the vortex. I've done it both ways and the chimney is better.
