Can the corn sugar be substituted with cane sugar?

if you soak the bag in warm water in seperate pot, it will help thin the liquid down making it easier to empty

What do you use for the second fermentation when you re-attach the ball in order to avoid the oxygen?

There is no fermenatation during the secondary. The amount of oxygen introduced when you open the valve is negligible and is soon dissipated by the residual Co2 that pushes it out. George
