Thanks for sharing the recipe ...Such a lovely dish. One query...Instead of adding all the ingredients of marination one by one, why don't you mix everything in the hung curd and then apply the marinade...That way everything will be applied evenly. Does it has a specific reason ?

Canola cardai safflower sunflower vegetable, soybean, corn all these oils are poison and cause inflammation of the internal organs with gauranteed dmaage. Including ghee available in market unless it is A2 cow milk ghee.

After the marination , I place in a single layer in multiple pans , made for pressure cooker and cook it for about 20 mins or 10 whistlles. After it cools completely , remove each kabob , dip it in a beaten egg and deep fry for about a minute. Serve hot. The meat literally falls off the bone. Enjoy !

8 hours of marinating the chops with curd makes it tender. Or you could add a tenderizer like a spoon of raw PAPAYA with skin

I dont think any tenderiser would be required here! 8+ hours in curd is enough to soften the meat since it's lean! Besides, covering it keeps the moisture released by curd and mutton within and helps cook the muscle in much less time!!
