Dave's a pretty good interrogator. He let Simon dig his own grave. When someone starts spilling Way Too Much after being asked a simple question, they are being untruthful. As someone who watches way too many police interrogations, you see guilty suspects go on and on with too much information/ too many details. It doesn't have anything to do with being a sociopath though, it has to do with being guilty.
