This is the type of bartender i like. Not the *HAhAH CoOl TrIcK ha? LemmE ShOw AnOTHeR oNE* while making my drink. Soft movements, calm, well reserved. He knows you dont give 2 fucks about who he is, he is just there to hand you over a masterpiece you'll cherish. Not to watch a fool juggling with your treasured drink, treating those finecrafted ingredients like toys. Main reason why i prefer silent and laid black places.

@@jasonswaglord1498 Well flair bartending isnt a thing at most craft bars because it kinda cant be. They use an entirely different skillset. Flair bartending is about milking tips and looking impressive while you make more simple drinks. Craft bartending like you see at most nicer japanese bars is all about making something youl never see again. Though freehand pouring is in itself a type of flair move since most people cant do it, I know several bartenders who have been in the industry 30+ years who wont bother trying because every liquor pours differently making it hard to get consistent results by freepouring.

It is an expectable, I really would like to go to a bar were i can hear, sell and observe every ingredient, as they become a cocktail. Alcohol should be meant to enjoy, no as a way to scape form life.

Junkai Ye the Aviation cocktail is known as the “signature” cocktail, meaning each different bartender makes it with their own ratio of the component spirits. The seal stamp is a play on the way people used to seal letters or sign things for legal reasons, etc; a signature. Also, a lot of Japanese (and other cultures as well) artists and craftspeople sign their work with a red stamp. So this drink has a ton of extra little thematic hints, which is totally awesome!

The classic Aviation has a blue-ish hue to it and normally would be garnish with a maraschino cherry for the color contrast plus matching the maraschino liqueur flavor. In this case he isnt using a cherry but a red seal stamp which gives the same contrast but somewhat resembles Japan's flag

Pretty much, yeah. Every other drink to use it is a Renaissance cocktail (from that period in the early-to-mid 2000s where cocktails really made a resurgence.)
