My coach had us working this drill a few days ago. I think he got it from here, because he described the three levels the exact same way you did. Good stuff, guys.

1. Respect is something there can never be too much of. 2. The wai at the beginning and ending of the drill set lets the holder tell the trainee he is finished and will not be attacked. In my gym, you are likely to be checked after the bell, or more techniques are given to push you. After you are wai'd you can actively rest, but not before. Guys get knocked out when they lose their focus at the end of a round, or hear the bell. Nice video DC.

Mr Miyagi said best defense against punch "not be there". Bruce Lee said getting hit is almost inevitable. Roberto Duran and Ali were great at rolling with punches. Every Muay Thai fan boy rips videos instead of watching for anything that can be learned. Best advice I think is from guys that actually fight and not the paper dragons in the local plaza.

I find this is a great way to deal with that damn oblique kick some people do, or if distance permits throw the straight left when u switch to southpaw stance x

It's Muay Thai. They are training more than 1 set of techniques in a day.

Now I'm all self conscious of this. I've been thinking about why I take my hand out of the glove. Maybe it is because I hand talk. Maybe because I hate stinky gloves so I take my hand out to air it out and not let it get so sweaty, but then why don't I take out my left hand. Maybe it's a course of habit because I take my right hand out of my glove when on the street, walking my dog and then I need to pick up a poop in baggie. What a mystery.

If your doing a kicking tutorial why wear gloves? I've never understood why people do that.
