That pepper sauce is mostly used on greens here and it is usually green Tabasco peppers and vinegar.

I remember a chili beer from the 90s, it had a hot pepper floating in it, and a yellow label on a clear bottle. It was more hot than tasty, but it left an impression on me for sure

Congrats Steve! Happy to hear you guys had a good experience in the Chicagoland area. My first job was at Wintrust stadium in Schaumburg, IL as a hot dog vendor for the Schaumburg Flyers baseball team in 2000 when the stadium was brand new!

Loving this breakdown of unexpected results! This was great info to keep in mind. But now I am strangely intrigued by the hot dog beer. I thought Crane's Beet Beer would be the weirdest thing I ever tried.....LOL.

How do/did you decide how much of the tincture to add when you bottled?

I believe Steve added to taste at bottling. That's the handy thing about using tinctures. Very flexible. - James

@@basicbrewing thanks That makes sense. I'll have to try it sometime. I have used tinctures before but followed a recipe and added an amount called for. I'd be worried about adding some, stirring, adding more, stirring, and oxidizing the beer. I worry too much lol.

I imagine the saltiness from the various ingredients cuts the alcohol bite, as well as add flavors not consumed by the yeast.

I mean….Idk if fermenting actual pork in there is gonna be sanitary hahaha…ya perhaps the tincture route as mentioned is a better route, particularly for certain ingredients. I’m sure the boys…and gal…over at Whiskey Tribe would love to make a spirit out of this. haha

No seriously... I'm no "yank" and I utterly loved it! 😁 It's not "tastes like meat", it's "tastes like a Chicago dog". These things are not simple dog-in-bun, they are culinary creations, and have a really unique flavour. The treat was just how closely the beer matched the dog, and still managed to be a delicious beer in its own right.
