Regarding simple core elements in OSR RPGs - One of my favorite OSRs is Dungeon Crawl Classics which is a 400+ page monster. The core of it is very simple, on to that core many complex things are bolted on. Each complex thing is fun in it's own right. EB reminds me of it when it comes to Failed Careers. There is a simpler version in DCC regarding 0 level character occupation, what your peasant uses to bash foes, and the garbage that starts in their pockets. I think EB does something similar to make the characters pop in the player's brains. I haven't finished all the EB deepdives yet, but I'm really glad you did them. It's inspired me to get serious about producing my own.

Also worth noting N++ is simple enough in design that it's available on all video-game platforms. I just bought it on Xbox One X.

Huh! I never would have expected this game to inspire anything on the tabletop.

Thanks for this. I was similarly inspired by the talk given by the creator of Celeste. The use of real-life climbing as a metaphor for safety and dynamism in a game has, i think, some fruitful comparisons to table-top rpgs.
