I fancied making a whole batch of lunches and what better than 'soup of the day!' in this case, creamy butternut squash soup, 6 portions in total not including the taste test bowl. 70p a portion not bad either.

BATCH cooking with PRESSURE COOKER makes 6 portions
4/5 garlic (I used 4 large)
2 onions
2 granny smith apples
1 tin coconut milk
2 butternut squashes
2 veg stock (made 950ml)
sprig of sages leaves (or 1 tsp dried)
Salt & pepper to taste
1 tsp cumin & 1/8 tsp cayenne pepper
pinch of cinnamon & nutmeg
add all ingredients roughly chopped up (set aside the coconut milk to add once whizzed) to the PC pan, throw in sprig of sage (tied together using cooking elastic - I save the bands that come with meat, washed & dried make perfect herby bands for stews and such)
Close lid, check PC vent is ‘sealed’ and choose Pressure Cooker Function, set to 8 mins on ‘HIGH’ , deselect ‘KEEP WARM’ function and press GO!
Once finished, you can allow it to naturally release - ie just leave it alone for 30 mins, or press the slider to ‘VENT’ gently - a lot of steam will come out. Once released, open and allow to cool further until you come to whizz it. Remove sprig.
Once whizzed fully, add the tin of coconut milk and mix through. Portion out into your tubs, allow to completely cool before popping lids on and chucking in the Freezer (handy to put a date on the tubs for future ref) can freeze up to 3 months. Is delicious served with grated cheese on top and a slice of crusty buttered bread

Hi Kerry, the average soup mug is about 500ml, so with six tubs of soup containing just under a litre then the the price comes down to 35p a serving, which gives you 12 servings, or at least 9 if you got 1 and a 1\2 out of each tray, 57p each serving. : )

I love butternut squash soup too, its a big bowl of comfort in the winter. Never seen it made with apples tho', probably takes the edge off the sweetness of the squash, I shall try this in the winter Kerry. You do make me laugh when you forget what things are called, I know exactly how you feel. 🤣❤

I never thought of adding Granny Smiths must give it a try. Sunday and Wednesday year round we make soup. Perfect for lunch and if we are heading out pop in food flasks so always gave a lunch to hand...absolutely 😋

​ Made your soup this morning it is a total hit and a nice wee firey kick.... I might have been a bit generous with spice 😁 I can see this being a, "mum can you bring soup and homebakes when you visit soup" especially in winter🤦‍♀️ I like batch cooking and my daughter going back to College in August so any help keeping costs, down and knowing she has a nice soup to take with her and homebake .... I am trying hard to teach her husband to cook as he will need to do more if cooking with daughter at College and Part Time job

Hi Kerry. That soup looks delicious, and cooked so quickly too. Preparing the ingredients probably took longer than the cooking time. I think the word that you could not remember is oojarkerpivvy.

Love butternut squash soup. Make it in my soup maker then put into my Sistema soup mugs. Freeze, defrost and microwave all in the mug. Love it. Not tried with coconut milk though so its now on the list. Thanks Kerry. xx

Love butternut squash soup although I’ve never thought of putting apples in it, will definitely give that a go when I next make one. Sometimes I cut the squash in half and roast it this way you can put the whole thing (except seeds) into the PC i have a soup maker, takes 19 minutes! If you grow butternut squash next year might work out even cheaper 😊 😋😋😋

Carol is the soup maker in this house Kerry,I cook everything else,we have one drawer in the freezer dedicated to soup and we find one Chinese takeaway or similar size container does two portions which we bring out the night before and normally have it for lunch if we're home,the Instant Pot usually takes enough for 6 or 7 tubs,we have a couple of those microwave soup cups but it's the Sistema Klip-it which are a bit more expensive but good,Carol used to take one to work with her,very handy,another enjoyable video flower Xx

Kerry, once again I feel like kindered spirits because of searching for words the use if aiund effects ( buzzing of the immersion blender....tooke me a minute to think if it before commenting). I love butternut squash but i het a bad case if contact dermititis frim peeling the squash..i have to use gloves. Guess whatever enzyme that agitates my skin must be cooked off with heat. Love roasted butternut squash cubes in air fryer with spritz of olive oil and herb or spices is a personal choice. Wow, your weight loss really shows. You are such a busy bee...when do you rest?

Need to have a crack at his recipe as looks delish. See you have the same hand held mixer as I, had mine 8 years and possibly the best value for money kitchen item purchased . Have you tried a neck fan, my hot moments no longer exist since purchasing, bliss. X

How do you cut you butternut squash so easy, I really struggle cutting it. Soup looked nice . Homemade garlic ?.. I hope so. It’s very nice isn’t it well ours is. So I am sure your is.as well. Xx

Butternut squash maybe for me with arthritis that maybe easier to try . I must say it did look tasty . Thank you and take care x
