I know it's a bit late 3 years after but if you do want to ship something to Norway, either a knife to repair or an old Slap Yo' Daddy item, I won't hold you back. You've got me hooked on knives and BBQ season never stops in this country. Winter is a great season for all of these things.

I have a proposal for a video for you. Since your channel name is Burrfection, how about you take your favorite knife, the best of the best and take a selection of stones that you think are the best and sharpen that knife to the most best possible sharpness you could manage. Top of the line what you can do. In a true Burrfection style going all out, the best skill with the best equipment. No limitations, stropping, pastes... What do people think about this proposal?

I just found a shapleigh's hammer forged from 1890 an old Japanese nakiri and a Chinese cleaver. All rusted and chipped I spent 3 dollars and I've restored 1 so far. So much fun👍🏾👍🏾👍🏾👍🏾👍🏾

Wow, I follow this channel for over a year and just stumbled upon this video. This is the first time I saw Harry, and I find him so delightful I searched his channel and subscribed without watching his video before! 😄👍 And speaking of Morgan Freeman, Harry has a high pitched Freeman voice. 😅

I never would have thought you were shy until I saw the videos with you and Harry. When Harry really gets going I can see you struggling to get a word in and then not even trying. lol He has such a bold personality, the difference is night and day. I was really hoping to see you sharpen the slicer. I would really love to see you review and do more with slicers and/or carving knives. Something designed for carving the Thanksgiving turkey/Christmas ham/Sunday roast. A slicer/carving knife is on my future purchase list. I'd also like to see the knives in real use, perhaps some videos on proper cutting grips, cutting strokes and protecting your knife on the cutting board for newbies like me. On a side note, I wanted to say thank you for your rapid reply to my message. I've ordered the Naniwa Chosera 800 and it should be here Wednesday. I'm hoping to be able to get the 3000 next month. :)

RPP what was your question about the stones? I was between King KDS and the Shapton Pro, but he advised King was better as long as my knives are not hard, but I have Dalstrong HRC 62+ so they are hard. Now I'm wondering about KDS vs Naniwa Super Stone. Or if I do decide to spend a little more, Shapton Glass vs Naniwa Chosera

My question was based on an old video from his first time using/reviewing the Naniwa Choseras and the Naniwa Super Stones where he'd mentioned the Super Stones being "more forgiving" for beginners due to their slower cutting speed. I too have a Dalstrong Shogun Series X Gyuto so due to the high HRC he recommended the Choseras, as the Super Stones would struggle with a knife so hard and would take much longer. After thinking about it I decided that despite the faster cutting speed and "less forgiving" nature of the Choseras, the longer I spend on the stone, the more likely I am to lose my angle and screw something up so his recommendation made perfect sense to me. Plus, I get to see through his videos how my exact knife SHOULD behave on my exact stone which is super helpful for me considering I'm just getting started.

I know this channel is about the fans for sure. Please do "D2" preparation and final honing. It is my favorite knife steel, considering most every alloy, and "D2" won out. It may be hard to find in "kitchen" knives. I have several fine custom hunting knives in that alloy and though they have dressed out many large deer, they have not required anything but a DMT diamond stick. But in the rotation, they now could use a stone. I will respect your reactions, but I have detailed many fine custom knives. 60 years experience---actually trained by a demanding grandfather.

I had to watch a lot of videos to figure out why the technique I used for my carbon steel leather tools didn't produce good results on ultrahard tool steel [CPM S30V] and it's because I was not patient and not paying enough attention to the subtleties. I will say that being unable to remove much material period makes it easy to check the progression of the burr from side to side, and I actually get it. Now that I understand what sharpening and honing are and that they are not interchangeable terms a little better, I have put a good edge that cuts paper and shaves back on it and regular everyday steels now seem easy by comparison. Thanks for the reviews and technique lessons.

Got in to cooking a bit heavier due to Pandemic, and love to try new hobbies out. Was using CHEAP knives that were all super knicked up and after purchasing my first high quality knife set, was determined to sharpen the old ones up and landed on your video. Got to give a shout out to you Ryky as you got me in to this as a new hobby and have gotten asked by a bunch of friends to touch up their knives. I've seen probably 30 videos (many numerous times), but the Harry combo (especially seeing the massive improvement) is an awesome combo even after over 4 years of this video being made. There's so much positive energy and enthusiasm. I normally never subscribe on KZbin, but wanted to let you know how awesome this channel is even after years of old videos.

Harry the little wedge your friend was using would be very helpful. I've not sharpened cooking knives however i have pocket knives ..my favorite way to keep the correct angle is by putting my thumb on the stone , it's not as precise but works , smaller knives .

Great video. I was able to get the same results as Mr. Soo and while it was good enough for my uses, I still wasn't completely satisfied. After watching the video, I came to the conclusion that I had to have been sharpening my knives at too low of an angle too. I fixed this issue tonight and got a really cheap knife sharper than any blade I'd ever sharpened before. For the first time, I was able to feel a definitive burr. Thanks a ton. I look forward to freshening up the edges on my whole arsenal.

do you use just stones or do you use different types of steels also ...eg conical or oval diamond or ceramic etc ....i seem to mess up alot of decent knives on the honing steels perhaps i ought to try with the stones

VG-10 is a cutlery grade stainless steel produced in Japan. The name stands for V Gold 10 ("gold" meaning quality), or sometimes V-Kin-10 (V金10号) (kin means "gold" in Japanese). It is a stainless steel with a high carbon content containing 1% Carbon, 15% Chromium, 1% Molybdenum, 0.2% Vanadium, 1.5% Cobalt, and 0.5% Manganese.[1] The VG-10 stainless steel was originally designed by Takefu Special Steel Co. Ltd.,[2] based in Takefu, Fukui Prefecture, Japan (the former cutlery/sword-making center of Echizen). Fred Swift sadly, VG10 and SG2 has taken a backseat to high speed powder steels from Hitachi such as ZDP-189, SRS15 and HAP40.

Just watched both videos with Harry Soo. Both were good, but this was my favorite. I enjoyed your Q&A with each other, kept me engaged and entertained. Sharpening techniques are useful, but adding your human presence, along with another person's is unique. I really enjoyed getting to know you and Harry Soo better. You both revealed a very real human presence which adds, for me, an added value for watching any videos and gets me to want to subscribe and watch more. Thanks for video.

On the Knives; Do not be fooled, Miyabi knives is German owned. Personally, I'll stick with Japanese and Japanese handmade, simply because, I trust them more. Japanese generally do not try to fool the consumer.

I think harry is putting too much pressure on his finger on the thinner knives, that actually flexes the desired bevel of the knife and rounds out the apex of the edge. He should support the edge of the knife with his thumb or pointer finger more to stabilize his sharpening angle. Also locking the wrist and forearm will help.
