When I was in the Bass club my partner and I fished tournaments all over TX and we ate At many BBQ place all over Texas. We would go out of way to go to this one and on the way back home we would stop at it again, He is 82 and I'm 72 now would love to go there now. We did this for 20 years until our health got the best of us. Thanks for bring back old times to me. I remember it when you walked in the door, nothing has change.

Interesting and inspiring video. I live in Denver and this is a place where Mexican restaurants are on every corner competing with each other but that don't seem to encourage chefs and owners to be authentic or unusual. Every single time I try a different restaurant I order something with red chili and something with green chili and I just have to say, the sauces are exactly the same in every restaurant. Mild chili, pork and onion chunks all in a cornstarch thickened dribble...it's annoying so to see someone make something from scratch and nailing it every time is an inspiration.

Salt pork is just like bacon. It looks like bacon. But it's not cured like bacon. Both are from pork belly and cured with salt. But bacon gets smoked in smoker. Salt pork is not. And salt pork generally has more fat..it's widely used to flavor dishes. I grew eating it. I'm German. And we always called it side pork.

Recipe says "help break some of the beans' skins / “Bumb the beans”. Didn't Norma Jean say 'Bump' the beans? Make them bump into each other. I wonder what the reddy brown spice was closest to the camera, smoked paprika? Great interview, what a wonderful place.

Love the video... however grandma in the video said she cooked the beans all night long but in the recipe description it says cook 2 to 3 hours... 😢 ..??

We adapted the recipe slightly for the home cook. The 8 hour soak is overnight and then the 2-3 hours is on the stovetop. The results are the same! They need to do the lower temp overnight cook in the restaurant to be prepared for lunch service.

Black’s in Lockhart is good. Black’s in San Marcos is awful.
