I had a lang for about 6 years.... a 36 stretch. I had zero complaints on construction quality....cooked great food...and that's really what it is all about in the end....not the cost/sq in. That is why 5 years later, that I decided to buy a Lang 60 Deluxe....expensive? You bet....but I found a smoker that cooks great food, built like a tank, that I don't need a steep learning curve to operate, so I'm sticking with it. It will be my life cooker....I'll have it until I'm dead.

Great video. Thanks for all of the work. I was starting to think about doing something similar but it's hard to search for just reverse flow. Some sites act like they have them and don't. Some articles advertise they are reviews of reverse flow but include straight flow. I'll admit I am prejudice towards the SF. I was happt to hear the patio models are faster delivery than the current 3y wait on custom. I'll have to look into that. My COS will barely make the rest of the summer.

TMG pits seems to be a pretty good choice, I have looked at many smokers, but i keep ending up back with them

There are a lot of die hard Shirley fans out there, and Shirley is good, but TMG is good too, and depending on what you want, maybe better sometimes too.

Having owned a Lang 36 Patio w/ warmer box (regret selling) and now back in the market for another reverse flow smoker the Shirley IMO is the best value for build quality. Bonus item is they are 2 hrs from me.

Some of the reverse flows have doors that open out VS. Up… this is why their shelf is lower which allows you to open the door while still having pans, etc. on the shelf.

The only downside with the TMG is they are 30 weeks out. That is a long time to wait.

I kmow I'm late but I'm trying to figure this heat from the baffle out. Have you tried putting a ceramic plate on the baffle? Like a ceramic plate from a kamado

I'm not sure how well that would help unless there was an air gap between the two. This would also work with just a second steel plate.
