Looks like an amazing event. Love to visit some day, it’s not very far from me. Love seeing some RGV representation! Although, personally I always take offense when that part of Texas is called South Texas. Maybe because I’m REALLY south in the Rio Grande Valley I always feel south is Corpus Christi and below. Just a gripe I love bringing up every time! 😂 I would throw Hondo, San Antonio, Austin and those areas Central Texas.

For the beginner of bbq, steaks, and burgers; the best thing to start with is a Weber kettle. You can smoke or grill or flame grill. Temperature is what truly works for any meat. You can have medium rare many different ways. BBQ is a skill. Even when smoking meat know that the smoke is a cancer causing agent. Try to burn wood or charcoal clean. Heat up the fuel before the fire and throughout so it ignites and burns clean. Some smoke is dirty with harmful chemicals. Clean smoke comes from very dry wood.
