BBQ QUAILS
Ingredients
• Quails 6
• Ginger garlic paste 1 tbsp
• Mustard oil 1 tbsp
• Salt to taste
• Fried onions 2 tbsp
• Paprika 1 tbsp
• Lemon juice 1 tbsp
• Roasted gram flour with oil paste 1 tbsp
• Tandoori masala 1 tbsp
• Fenugreek dried ½ tsp
• Coriander powder ½ tsp
• Cumin powder ½ tsp
• Oil as required
• Coal for smoke.
Method
Marinate quails with ginger garlic, mustard oil, fried onions, paprika, lemon juice, roast gram flour paste, tandoori masala, fenugreek, coriander and cumin. Add oil and make sure to add slits into each quail. Bake or BBQ for 10mins.
PATAKHA DRUMSTICKS
Prepare Patakha Spice Mix:
• Jaifil (Nutmeg) ¼ piece
• Laung (Cloves) 7-8
• Javitri (Mace) 2 blades
• Zeera (Cumin seeds) 1 & ½ tbs
• Sabut dhania (Coriander seeds) 2 tbs
• Lal mirch (Red chilli) crushed 4 tbs
• Lehsan powder (Garlic powder) ½ tbs
• Kala namak (Black salt) 1 tsp
• Amchor powder (Dried mango powder) 1 tbs
• Namak (Salt) 1 tsp or to taste
• Tatri (Citric acid) ½ tsp
• Kashmiri lal mirch (Kashmiri red chilli) powder 1 & ½ tbs
• Ajwain (Carom seeds) crushed ½ tsp
• Drumsticks 4-5
• Dahi (Yogurt) whisked ½ Cup
• Chilli sauce 2 tbs
• Soy sauce 3 tbs
• Adrak lehsan paste (Ginger garlic paste) 2 tbs
• Namak (Salt) ½ tsp or to taste
• Lemon juice 1 tbs
• Zarda ka rang (Orange food color) ¼ tsp
• Cornflour 3 tbs
• Cooking oil for frying
Method
Prepare Patakha Spice Mix:
-In a spice mixer ,nutmeg ,cloves, mace, cumin seeds, coriander seeds & grind well.
-Take out in a bowl, add red chilli crushed, garlic powder, black salt, dried mango powder, salt, citric acid, Kashmiri red chilli powder, carom seeds & mix well. Patakha spice mix is ready! Marinate drumsticks then grill, bake or steam.
POTATOES AND PEAS RICE
Ingredients
• Rice soaked 2 cups
• Onions 2 sliced
• Bay leaf 1
• Black cardamom 2
• Green pods 2
• Chicken cube 1
• Potatoes par boiled in cubes 1 cup
• Peas 1 cup
• Salt to taste
• All spice powder ½ tsp
• Coriander powder ½ tsp
• Cumin seeds ½ tsp
• Oil as required
• Water as required
Method
In a wok add oil, saute onions, till golden brown, add cardamoms along with bay leaf and cumin, saute till aromatic. Add chicken cube. Along with assorted veggies. Potatoes and peas. Mix well. Till simmer. Add rice and add water. cook on slow flame. For 15mins.
