I worked at two other BBQ places in Fort Worth before I started on the line at Heim River, but when Travis selected me to work in this smokehouse, everything changed. I learned so much from that crew and can't say enough good things about Travis for giving me the tools to excel where I'm at now. Things ended on a sour note between Heim and I, but that was my mistake and my pride that led to my leaving. It was very hard work, and between the extreme temperatures of Texas summers and winters, the battalions of flies (and the salt gun we used to keep them at bay) and the legions of kids running around the smokehouse while the parents sat at the bar it was a crazy gig. Thanks, Travis. Love you, Robin!

I enjoy your videos, have been watching for quite sometime. I like the concept of your new video series. As a viewer I would like to suggest making the video longer. I get I am just that, a viewer and suggesting not my place. But I would bet I am not the only one thinking they want more of these videos. As in longer episodes which would bring more in depth of the bbq establishments you visit. Just my 2 cents that no one asked for. Keep up the good work. I really enjoy your videos and your rubs.

I love this video series. It was one week ago I was on a BBQ road trip with my son and was able to stop in Ft. Worth for some Q. After consulting friends, family and Texas Monthly we decided on Panther City, but Heim was also recommended. Next time I'm in Ft. Worth I know exactly where I'm heading for a meal. So much bbq and so little time...

Another great video! Travis doesn’t get the love he deserves for giving the World bacon burnt ends. You can argue he might not have been the first to make them but you can’t argue he’s the best and made them widely popular. For that alone he should be in the bbq hall of fame. Having said that Panther City also does a fine job with their pork belly jalapeño poppers. So damn good.
@rueridge75973 жыл бұрын
Panther City is much better than Heim. Their quality is way off trailer days. Expanding without quality control is risky business.

I agree about the Jalepeno Poppers, the best I have had in my entire life. However, the brisket was below average, and the ribs were just average and cold (at 12:00 pm).

Lovin the series so far. Only complaint is the episodes are too short. Would love to see 20-30 minutes of each place. They all have their own unique history and would be cool to hear it. How did they get started, what made them fall in love with bbq, who's their biggest inspiration, a better showing of their operation, etc, etc.
@DBrummerCamas3 жыл бұрын
As entertainer, Bobby Womack, said, "Leave them wanting more and you know they'll call you back." Matt, your episodes are SO well done and fun; and, like great BBQ, you definitely leave us wanting more. Just one question: When will this be picked-up by Discovery, or The Food Network??? It would be fantastic if you were able to stretch these into 30-minute shows on one of the cable networks! Way to go!!
