Man, it's not even 6am and now you got me craving some BBQ!!! After we built our smoker, we started changing the way we season our meat for smoking. We used to use all the rubs and even made our own. The best way we found is just to season the meat with salt (or Lawry's Seasoned Salt), black pepper, and celery seed (gives it a great red smoke ring). Then caramelize some sauce on at the end. Really brings out the meat and smoke flavor the most that way! Garlic Powder, Onion Powder, and Paprika in the rub are also good, but seem to limit the smoke from getting into the meat all the way. Still sometimes add those after the initial cook, before wrapping. Happy travels!!!

Great review! I've been to Rendezvous and agree it's my favorite "in Memphis"... But IMO Beastcraft BBQ has the best in the STL area even though technically it's across the river in Belleville Il. We've done several around St. Louis... I've also done a couple in KC but not hit on any that was spectacular and the same with a few in Texas (but sure going to try some more the next time I'm there). What's really different to me is the Carolina style. Also, what's interesting is the completely different styles of the sides - Baked beans, Potato salad, and the slaw around the parts of the country. My top 5 1. Green river BBQ in Saluda NC 2. Beastcraft BBQ in Belleville IL 3. Nowhere on Route 66 in Afton OK 4. Hillbilly BBQ in Wickliffe KY 5. Sawmill BBQ in Cahokia IL

in Kansas City, we have some very good Q' places. Bryants is a long time place but others I think are better. I think you probably should have been got to Joe's KC which is IN a gas station. Gates is a LOCAL chain - all located here. it too has been around forever. Jack's Stack is probably my favorite. We have dozens I think are probably better than Bryants. Kansas City is also home to the American Royal BBQ contest which is one of the biggest competitions. People compete from all over the world... Your guy in Austin that is so famous didn't even place when he competed at that competition... The Kansas City BBQ Society BBQ rules are what most competitions around the world are using to judge their contests. When the big tornadoes that flattened parts of Joplin Missouri, a BBQ team that competes went down and started cooking.. The fed anyone who came up and said they were hungry.. The meat companies and some of the store chains provided the raw materials.. NOW the KC BBQ Society has an emergency unit that they pull to such disasters - They have the contacts which provide the raw food and local teams man the grills.. same as in Joplin... They were in Hawaii - but had to use local equipment but the same thing happened there.. Kansas City IS the home of BBQ. Were as Texas is Beef and Memphis is pork, Kansas City cooks all meats including mutton and such. You can go to 8 different places and taste 8 different styles of BBQ here. Ask 6 people what are their favorite places and you will bet 12 answers- mostly all different. Slaps BBQ is famous - they cook so much and they shut down for the day when they run out... Harps BBQ only runs I think one day on a Saturday a week and I understand there are lines there to eat. Make a trip to KC again and spend a few days and try more than just one place... BBQ dates back to 1908 here - Gates and Bryants grew out of Henry Perry's bbq and both worked for him before starting their own places...
@PavingNewPaths Жыл бұрын
None of the places we tried were bad, but Memphis defiantly does things different! We are not sure if it was so good because of that, but we have been back twice to Memphis and every time we go back to Charlie Vergos! The St. Louis and Kansas City were good but both were exactly like what we would expect in Texas! We love them all, and in Texas the gas station joints are the best ones, usually off the beaten path some as well!

Growing up in Texas it is very hard to pick one I would consider the best! I know there are some very good BBQ places in Central and South Texas! Then you have the Houston Rodeo Cookoff which I know has many teams from outside the state! But it also has so many smaller companies from inside the state that make great food! Memphis won because it was so different and unique from anything we have ever had!
