Bro! You're the goat of us Southerners. I was always taught to use salt in a cast iron pan to do burgers, never grease or or oil. I have to try this. 😊

One thing I love about your channel is the diversity of dishes and base ingredients. KZbin is too full of cooking/food channels that do nothing but “we cooked a $1k a5 wagu in truffle butter!” type videos.

Once again you've hit it outa the park chef. Dame I sure wish I could eat most of that. The shrimp soup, less the bacon, I could eat. I need to work on adopting that recipe. Now I COULD easily eat that entire meal. I'd die happy LOL😂

Okay, let me ask you... I make my burgers "the old fashioned way" starting with ground chuck, adding bread crumbs, seasonings, egg, and whatever else before forming patties and then grilling. What kind of flavor does cold smoking add, and how would you rate it against the old way of mixing? I kept watching and noticing you didn't add ANY seasonings (except some salt) to your burgers and I'm really curious how they taste. I'm in Phoenix, so I think I only have about a month of opportunity to try cold smoking lol (I'm reading cold smoking temps should be well below 85 degrees to prevent cooking). Maybe I can try it in my outdoor grill overnight with the meat on a rack instead of hanging (our overnight temp tonight will be 42 degrees, for example)? Anyway, nothing beats good homemade burgers! I'm going to save the lentil/shrimp soup recipe for a separate meal, we like having a nice cold mixed salad with the burgers. Thanks for sharing all of the good info and cheers! It has the taste and flavor of a smoked dry aged steak. You just have to experience this one yourself. Trust me Peter, you won't regret it. Start the meat cold and don't go above 60 deg. 3 hours of smoke will do just fine. 60 and under works just fine so 42 is great.

Wow that looks very juicy Yummy 😊 I was wondering if you smoke or bbq aged meat? I once bought a whole prime rib placed it on a rack over 1kg of course sea salt spread on a baking sheet. Put in my fridge unwrapped for 96 days. Bbq it low and slow. The taste was truly out of this world. Yummy 😊 CHEERS 🍻 Eh 🇨🇦

Hey there…👋… I don’t think I’ve ever had a steak burger. I’ll definitely have to try it. I love the fact that you know what meat is in your burger versus going to the grocery store getting hamburger meat lol, so I’m sure it’s very delicious compared to a regular boring hamburger lol. I like lentils, but unfortunately they give me the same effect that cabbage gives me which is not good…😭… what other beans do you suggest that I can use in the soup? I also love that you didn’t make boring french fries to go with the burger lol. Everything looks delicious as usual and happy new year! 🫶🏽

That is a beautiful burger and soup! That burger looked incredible. Does the cold smoking actually cook the meat, or take away the rawness of it? So if it’s cooked on the stove to medium rare, would it be considered cooked all the way through because of the smoking? The veggies were incredible, too. What other meat could you use in the soup instead of shrimp, but still with the bacon? This is a healthy, wonderful meal. Love it! Nice job❣️
@bbqsouthernstyle8 сағат бұрын
Hay good to see you my dear. I hope your back home with your babies resting. Your probably need a good week's rest to Katch up. Raw is Raw by the way cold smoke is exactly what it is. Almost like your refrigerator full of smoke. Everything would be cold and smokey. You still have to cook it. Smoke is a seasoning. Nothing new just a very old technique to add smoke flavor to foods. Like smoked cheese etc. Glad you like the Burger. I take it you don't like shrimp?
@dmartin12038 сағат бұрын
@ I made it home safe and sound! The babies were so mad at me! Lol! I had to bring out the “good” treats to win them over! No…cod and mahi mahi are the only fish I’ll eat…occasionally a white albacore tuna, but that’s it. That’s why I was so excited that day you made battered and fried cod. I thought I died and went to heaven! I told you…I’m a picky eater! 😔 I’d just as soon never eat if I didn’t have to! That’s why I watch you…for recipes that I can tolerate eating. You make the good stuff! I laugh when you say, “Make it your own!” Mine is gross! I want to make it your way! 😁 I can’t make or eat everything you make…but everything you make is amazing! The stuff you make that I can eat is great…like the sautéed veggies. Yum! So how are you! Everything going ok for you? How’s the puppies and horses? You keeping warm there in the south? By the way…I really cannot wait til you make the smoked cheese. I love cheese!

Lol I'm sure you're not as bad as you say in the kitchen. Ah I see the cats are smart they have you on punishment lol. My dogs tried that with me last week. I gave them a steak each and they were brats the next few days waking me up in the middle of the night whining for more the next day lol. I had to cut them off they can't handle the food smh. Other than that, I'm good thanks to the good Lord. Next week the cheese vid will be out.
@dmartin12037 сағат бұрын
@@bbqsouthernstyle Oh that’s funny…the dogs were brats! They are smart, too. They know they have you wrapped around their little paws! Same with my cats! Oh my gosh! The Lord is so good…I am in awe of Him daily. We are sojourners while here, but look at how the Lord brings His people together. He knows just what we need! I am grateful for you, my dear friend, and I am very happy that you are doing well. 🤗 I’m going to be thinking about that cheese now! Lol! Don’t you know it❣️

You are not a chef. You are an artist. Chef learn a recipe and enhance the final product. That is 10 steps of someone using a microwave or timer. You have a method and understanding that detail is more important than the process. That is light years ahead of a Chef!!!! Well done!!!!
