Eggplants are in season these days.
I'll make a delicious gajibap today using eggplants.
It's even better with some ground meat, but still good without it.
Be careful not to *overeat*!

Gajibap (eggplant rice) with sauce (4 servings)
[Ingredients]
Gajibap
2 cups (320g) rice
1&2/3 cups (300g) purified water
6 tbsp (40g) cooking oil
1/2 stalk (50g) green onion
3 tbsp (30g) dark soy sauce
4 large (800g) eggplants
Sauce
2/3 cup (40g) chives
1/3 cup (20g) green onion
2 (20g) Cheongyang peppers
1 tbsp (20g) minced garlic
2/3 cup (120ml) dark soy sauce
1/2 tbsp (6g) brown sugar
2 tbsp (16g) coarse red pepper powder
2 tbsp (12g) ground sesame seeds
1 tbsp (7g) sesame oil
Optional
1 egg
3 tbsp (21g) cooking oil
[Directions]
Gajibap
1. Rinse the rice clean and soak in water for about 15 minutes.
2. Slice the eggplants in half lengthwise and cut at a thickness of 0.5 cm
in the shape of a half-circle.
(Cut the eggplants however you like.)
3. Chop the green onion finely.
4. Add cooking oil to a large pan and stir-fry the green onion until
the moisture is gone to infuse the oil with green onion.
5. Pour the dark soy sauce around the edges of the pan.
6. Add the eggplants in and stir-fry until softened.
7. Pour the soaked rice in a rice cooker and add water.
(Use less water than usual because water comes out of the eggplants.)
8. Place the eggplants on top of the rice and start the rice cooker.
9. Scoop the cooked gajibap in a bowl and serve with the sauce.
(Top with a fried egg if desired.)
Sauce
1. Slice the green onion and Cheongyang peppers in half lengthwise
and chop them finely. Chop the chives finely as well.
2. Mix the green onion, Cheongyang peppers, chives, minced garlic,
dark soy sauce, brown sugar, coarse red pepper powder,
ground sesame seeds, and sesame oil to make the sauce.
