These are pretty if you get the metal pens you can do (3) 20" beads and spacers. Much more stable.

Is there a difference in plastic versus metal pens? Are one better than the other?

The metal is priced higher and the material, if course, is little sturdier but the plastic is just fine.

I actually don’t have a favorite size bead because they come in so many different sizes and shapes. It’s just really hard to choose. Just have to make sure they are large hole or 2mm-2.5mm

Thats a tough one. I have never epoxied these. It is a very small work area. You may be able to do it with waterslide. You would have to sand them to prep and that would remove the color. I would also recommend buying the stainless blanks and not the acrylic ones.

If the turning really bothers you, you can use a little glue to hold them in place to one another and to the top and bottom of the pen parts they touch.
