#bear #cooking #offgrid
Off grid cooking in the wilderness on the open fire or woodstove often involves wild game, natural materials and primitive techniques, including things like black bear meat, rendering fat for valuable cooking lard and grease for waterproofing and healing, making cutting boards out of maple trees and regulating hot fires for cooking things like corn bread on the wood stove.
My daughter asked if she could create my thumbnail this time. I think she did a great job!

In one of your videos, you were commenting on what people were commenting on you tube and your vids. In all honesty, the main thing is you have accomplished what you have set out to do. Less stress, less monthly bills, more time to do what you love, etc. All those people that speak negatively about your channel or other vids like yours are just haters. You are living your dream. You are blessed to have a wife that supports you and what you are working hard to accomplish. I am 61 yrs old and wish I had my health back, so I could do what you are doing. You are not only inspiring but, i live vicariously through you. I thoroughly enjoy watching your channel. Thank you for taking the time to do a great job videoing all the things that you do. Please keep it up. In Hawaii, we say mahalo (thank you). And Aloha.

I’m not sure if you mentioned it, but one of the great qualities of rendering animal fat is that it makes it stable for storage. It doesn’t spoil or go rancid as easily, so it can be used for a long time.

I dont have any bear fat to render but love my rendered bacon grease. I've got a 1970's Westinghouse Baconer vertical bacon cooker. The greases slides down into a catch pan as soon as it melts. The grease left can be poured into a large glass measuring cup and the clean fat rises to the top, solids and any water fall to bottom. Refrigerate then scoop clean lard into a second container and heat just a little. It's like gold.

Shawn, I've been rendering fat to make lard for many years. If you do an extra step, you will end up with tons more usable fat than you have. Grind the fat with a meat grinder first, then render it on the stove. The first render is usually pure white which I use for pastries and cooking. Then I keep rendering and the 2nd pour off I use to make soap. It is usually off white. I continue to render until all the lard is removed. What you have left is the cracklings...tiny pieces that taste similar to bacon that isn't salted. I use that in cornbread or in greens like kale or collards. Also added to cooked cabbage, onions and garlic. BTW, the roast looked delicious. If you're interested in a recipe for soap using the bear grease let me know.

There is always going to be people that eat animal flesh and those that don't. I am sick of the arguments that ensue. I do not eat any animal flesh as I feel animals are sentient beings, have a soul, feelings etc... it was a choice from a very early age. The bible also suggests that Mary had a virgin birth which is nigh impossible. In some Asian countries they eat cats and dogs and a lot of meat eating Westerners are up in arms about this. Culture and varying belief systems is what steer peoples choices. I grew up on a farm and I am highly sensitive to any animal slaughter.

Something I like to do once in a while is to substitute some of the liquid in the cornbread with a can of Rotel diced tomatoes and green chilies for a more Southwest flavor.

Wood stoves make great heat in a small cabin like that and you can cook on them, too. You have such a wonderful place in the woods.

I am continually struck by the genetic predisposition bred into retrievers to . um.. retrieve. Good training unleashes it. So enjoyable to watch and think about these things. Thanks for sharing

Cali has a new toy?! She does not mind the cold it seems. Your cutting boards are awesome. My guess is you cut those thin slices yourself? Nifty boots!! That rug looks like an Indian-Native pattern. I used to make rugs with my own hand spun-handdyed sheep wool. Very wise to warn about the trichinose. We had 2 young women who suffered from that disease. They used to live on a farm at the outback, where it was pretty primitive. The father of my friend when in Russia during WWII, ate there some Mettwurst. He never quite recovered. Several of his mates died from it.- You're a great cook! I learned a lot today. Take care of 'No One', which is you! You're doing a great job and making many people happy.

It looks to me that most of his stuff comes from Wiiliams Sonoma and Pottery Barn. FWIW, no remote Sourdough's cabin, I have ever been in, is so well equipped with niceties. Not very rustic, Not very realistic.

Hey Shawn, are there badgers to hunt in your area? Render down their fat and you have a great creme for treating bruises, tennis elbow, muscle or neck pain and even neurodermatitis etc. If you drink it, it is good against coughing, bronchitis etc. And in Germany we eat lard with greaves/cracklings on a good sourdough bread. For rendering, add a little bit of water (0.1- 0.2 liter per kilogram fat depending on the stiffness you like). Ah and add garlic and onions for a few minutes before straining the fat. Make sure you press as much fat of the cracklings out as possible in the strainer. Heat them again until they are really hard and add some salt. Let them cool down and cut them into small peaces, like dried onions. Put them back into the lard before the fat has become hard again to mix them into the glass or keep them seperated as topping for a lard bread. Add salt and a little pepper to the finished lard.

I think you do a wonderful job on giving us knowledge it is very well rounded! I would have never known that about the bear parasites about the fat breakdown etc. and it all is a part of your self reliance there😊 and I love the cutting boards that you made. Even though your wife and daughters are not present much in your documentary’s you create an atmosphere as if they are right there with you😊 Great job on the thumbnail! Always ❤️Cali🐶

There’s just something so peaceful about your videos, especially the beginning of this one. It calms my racing thoughts and general anxiety about everything going on in my life. It takes me there, where life is simple and peaceful, one with nature. As life was intended. So thanks again for everything you’re doing for us viewers!

I don’t understand the need for those who are vegans or against hunting to even leave a negative comment on a video such as this. This is My Self Reliance - a journey with a man who is creating a lifestyle for himself and his family, much like many other Canadians, Alaskans, and those who live deep in the country and hunt for food. If this isn’t your thing, don’t watch it, but don’t feel you have to be Negative Nancies on Shaun’s posts. They are incredibly informative and helpful for those who are looking to improve their homesteading experience, or for those who wish to learn more about being self reliant. Shaun has so much good advice on life in general as well. The Golden Rule is very similar in all cultures ... basically, do unto others as you would wish they do unto you ... this world needs WAY MORE tolerance, and it can start with you.
