紫薯豆腐蛋糕
Purple Yam Tofu Cake
All Ingredients:
2 medium size........purple yam
1 package...............silken tofu (17oz)
3 cups.....................crackers
1 can.......................coconut milk
6 packets............... unflavored gelatin (0.25oz each)
2 tbsp ....................white/brown sugar
1/4 cup...................rock sugar
1/3 cup...................condensed milk (adjust to your
own prefer sweetness)
4tbsp.....................unsalted butter
4.5 cup...................drinking water/spring water
Some water...........to dissolve gelatin

To make cracker crust:
3 cups cracker
2 tbsp white/brown sugar
4 tbsp unsalted butter
To make tofu purée:
1 package.......silken tofu (17oz)
1 cup...............boiled water (room temperature) /
spring water
To make purple yam purée:
1 cup............Steamed & mashed purple yam
1.5 cup ........boiled water (room temperature) /
spring water
To make purple cake layer:
Combine tofu purée with purple yam purée
1/3 cup..........condensed milk
3 package......unflavored gelatin
*add some (room temperature) water to gelatin to dissolve
** taste it after combine everything & make adjustment to your desired sweetness
To make coconut pudding (top) layer:
1 can ..........coconut milk
1/4 cup........rock sugar
2 cup............water
3 package...unflavored gelatin
*add some (room temperature)water to gelatin to dissolve
To make purple yam ball garnish:
Use left over mashed purple yam,
Add some condensed milk,
Form balls then coat each ball with shredded coconut

2 個............紫蕃薯(中)
1 盒.............嫩豆腐(17安士)
3 杯.............餅乾
1 罐.............椰漿/椰奶
6 包.............魚膠粉 (每包0.25安士)
2 湯匙 .........白沙糖/黃糖
1/4 杯..........冰糖
1/3 杯..........煉奶 (因個人口味調較甜度)
4湯匙...........無鹽牛油
4.5 杯...........白開水/礦泉水
*另外少量白開水/礦泉水將魚膠粉溶解

材料分配:
做餅底:
3 杯...........餅乾
2 湯匙.......白沙糖/黃糖
4 湯匙.......無鹽牛油
做豆腐蓉:
1 盒..........嫩豆腐(17安士)
1 杯..........白開水/礦泉水
做紫薯蓉:
1 杯............蒸熟的紫蕃薯
1.5 杯 ........白開水/礦泉水
做紫薯蛋糕那一層:
將豆腐蓉和紫薯蓉混合; 之後加入
1/3 杯..........煉奶
3 包..............魚膠粉(每包0.25安士)
*魚膠粉需要加少許白開水/礦泉水讓溶解和吸收水份
** 將所有材料混合之後要試味; 調較適合自己的甜度
做上層的椰汁布甸:
1 罐.........椰漿
1/4 杯......冰糖
2 杯..........清水
3 包...........魚膠粉(每包0.25安士)
*魚膠粉需要加少許白開水/礦泉水讓溶解和吸收水份
做紫薯球裝飾:
用凈下的紫薯壓成蓉,
加少許煉奶混合,
做成小球然後沾上椰絲
