Fun fact, I found this channel after a guy hit a deer just outside my farm yesterday night and dumped the carcass on my property. After checking with county animal control, they confirmed that I can keep the carcass so I was on KZbin searching up how to prepare a deer carcass. Over the last hour I've just finished gutting and skinning the deer, all thanks to your instructions. While I might have botched the skinning part somewhat due to lack of proper equipment and experience, and rigor mortis having set in, most of the deer carcass is still good, the stomach and intestines weren't ruptured, and I've got it looking pretty much as you have it. So thanks my man! I can go ahead and tick off the "Survival" proficiency in my RL character sheet XD

Quick tip for washing any meat. If you wash meat with running water like a hose or a sink any germs on the meat will get trapped in microscopic water vapors and spread around to all near by things. Kinda like a 360 cough. A clean deer like this would be fine, but like he said don’t wash out spilled stomach contents. It will just get microscopic poop water on everything, including you.

I am so happy that you stressed the fact of cooling the deer fast! So many times I've heard hunters say about aging the meat and letting it hang with the hide on in warm temps. Then they complain about a "gamey" taste. That is not gamey that is rotten.

Courtney, I agree. It is sad that so many of us did not have the advantage of such good teaching as is provided here. We learned instead from the well-meaning folks who invited us to hunt, or from other hunters that accompanied us, with little more experience than we had. Exactly. Gut as soon as possible, skin within two hours, then my personal preference is to wash the carcass with a garden hose with a jet nozzle. That way I can clean inside the gut cavity and spray it down to remove any loose fur. Helps with cooling too, then I can decide if I'm going to let it hang in a cool dry place. I personally like not hanging because I'm not a fan of the pellicle that forms on the meat after hanging.

I think you actually do the best of cleaning a deer, you stay traditional and simple with only using tools of the trade in this video......NO SAW ZAWS and or electric tools and to each there own no disrespect. For ones that dont have electric tools, you show how to go to the joint BREAK and detach the pieces with a knife and how easiest to skin with minimal knife effort. I thought that was just GREAT. Thanks for the video and your knowledge of the skill, keep up the good work😉!

I love deer. They're my favourite animal. I promise I'd never eat venison. I'm using this for Anatomy on an art piece, but I have to admit, this is a lot cleaner than I thought it would be. I didn't know the hypodermis looked like that. Thank you for the anatomy lesson!

Found your channel in 2020, with a recent upload showing how to remove the guts of a deer out in the field. With your 3 kids who were happy while watching and learning. Most likely dreaming of when they finally are old enough to go on a hunt for their first deer. @@ItchesIt well, today was the best day of the season, it was low temp, low winds, and had a few bucks walk out. Shot two about an hour apart. Cleaned and quartered them within 4 hours

Thanks for this video! I skinned my first deer ever! I used to help my Dad back in the day, but never by myself. He used the ole, "score the legs, skin the neck down to the shoulders, stick a baseball in the hide, tie a knot around the hide/baseball really tight, attach to his truck and strip the entire skin off in one smooth pull" method. I prefer this hands on method, lol. I wasn't quite able to leave all the meat on the rib cage, though. I imagine that comes with practice. As for scoring and breaking off the legs...are you he-man? I couldn't for the life of me snap them off like you did. Had to use a saw. Anyhow, temps are about 38°f here in WI during the days, so going to leave the carcass hang for 5 days, then going to watch your deer butchering video. Good stuff!

I have always had an issue with the flapper meat sticking to the skin, which for me is a major pain as I tan the hide and have to clean all that off on my fleshing board. I am going to try this technique my next deer. Very good video thank you. *My Chickens* will hate you though because one of their favorite things is me fleshing off the flapper meat so they can eat it.

Great video! This is exactly how we, most of the time, skin our deer. BUT, if we have the room outside and sturdy enough hanging mechanism, we skin the deer from the head down using a rope, golf ball, and a quad/tractor/truck...etc (as long as it's a deer we're NOT mounting). Just make your slits in the hide on all four legs and then cut and peel down the hide around the neck around 3 inches or so. "Hide" a golf ball under that section of neck hide and wrap the rope around the golf ball and the other end of the rope to the quad or tractor and drive away slowly. The deer is skinned in 2 seconds. I'd have never believed this would work until we started using it when we had our own little deer processing service. Saved a TON of time in skinning when we processed about 125 deer a season!

Awesome. I love seeing fellow hunters who take their time and do it right. We split our after we get the hide off, sometimes we'll split it thru to the head,, kind of the same way we do our Salmon Tuna, Yellow Tails, guts come off and out attached. Thanks for posting. Awesome

there's no esophagus left when I field dress, i zip tie it off, pull it out. and i skin after i dry it for about oh, a few weeks at 38 degrees. wash the mold off, and then skin, butcher and yeah... new to you guys, learning tons.

You make it look easy, I try to do that so I can salt and tan the hide saving extra scrapping of meat and fat. I like that you age the meat, most hunters I've talked to are processing the meat the next day.

Love your videos and watch all of them. Only nit picky thing is the hard tube with rings in the neck is the trachea. The soft tube is the esophagus. People watching the video probably don't appreciate the difference when you're talking about taking the esophagus out.

The two structures are located very close together within the mediastinum and so often portions might be removed together.

That was my only nit-pick too.....important because the oesophagus has 'green' in it that you don't want on the meat and the trachea (the ribbed thing he was swinging on) doesn't. We've also moved away from swilling them out here in the uk though im not sure 100% why. Other than those small points some great knifework and a good setup. Good to see him changing gloves regularly too.

Great video sir! After processing many deer over the years I learned the value of cutting at the knuckles on all four legs as well as the base of the neck. Used to sever using my meat saw taking time and a mess. Also leaving the piece of meat on the carcass on the back end I didn't know.

When I was in high school, my brothers used to bring home a deer every few days. I was learning the muscles in a cat for anatomy class. I dissected the deer like a cat and aced my exam . Cut up 3 deer in a 2 week period and packaged it.

I've always wanted to go hunting. Just forgot about this part 😅 I've caught fish about half my size for my family. Fluffing lures came off in a minute. We didn't catch any silvers, but the way my aunt described them, they sounded like the size of that deer. I've never tried deer before, my dad says their to cute to eat. As a women with RA i do all our processing it takes me longer now then it used to but i can do it. But watching you break the limbs i was like yeah thats not.an option lol.
