beautiful but please don't trim ANY precious fat. if it's too much i'll trim a little off when i get home, render it and fry it up with the rendered fat and a little butter, and you should be able to smell that steak cooking right through your screen right now also, on stovetop those twin beauties are gonna need a very heavy pan and abnormally massive heat if cooked fresh, cuz they are gonna cool your cookware a lot more than just one steak

Why remove the fat? That's what allowed humanity to survive... The modern butchery is wrong in removing the fat. 😢

looks like you've done this a few times! I've worked repetitive productions jobs. Does this get tedious? My sister was asking me where a pork tenderloin came from. I found your visual guide to cuts of pig and sent her the link. Nice videos very educational! Thanks!

What I want to know is: after you've had the steak as an entree, what do you eat for the main course?

Greetings from Finland gentlemen! First, I would like to see you are using some kind of safety gear when using the saw. Secondly, it would be lovely, if you can do a video what is the difference between US cut and European, because I know, we cut differently. I was working in a butchery over 30 years ago, but only cleaning bones, to be honest. But it would be great to hear and see about differences. For instance, we take tenderloin as a whole, as well as a sirloin, which can weight up to 4.5 kg / 9 pounds. Thank you for a great channel.

i live in WA state, close to Idaho. we have a lot of white people. there is this little restaurant called chicken and more. it is owned by a black family. I went there and got a beef brisket sandwich and joe joes. idk if that family was from the south, or what, but it was so good that i have never had anything but that brisket sandwich at a place called chicken and more. i am sure the chicken is great. their brisket is as 10 out of 10 as it gets.

I work in a slaughter house, so I don’t really get to see these sorts of cuts made. That being said, it’s nice to see that these gentlemen don’t let any of the best parts go to waste! Great job sir! 👍🏻
