I think so many people here are confused about the milk tea. Milk tea in UK is black tea + cream. The ones in Thailand, Singapore and Malaysia are black tea+condensed milk. The one in Hong Kong is black tea+evaporated milk. The taste are different too.

The blue flower is actually called blue cornflower. It doesn't have a strong taste or scent. It just adds visual value. Bergamont is a small citrus plant. The distinguished smell of Earl Grey comes from the bergamont oil, that has been added to the tea. I love it! A great tea!

We do have condensed milk. It's not used for a milk tea. You need fresh milk, not milk derivatives or manipulations. Calling condensed milk 'milk' is the equivalent of calling cheese 'milk', or the equivalent of making a tomato pasta sauce out of just tomato ketchup. If you put condensed milk in tea, you've not made 'milk' tea.

The blue stuff in that "French Earl Grey" is not bergamot. Bergamot is a small sour citrus fruit; the yellow bits are the rind of bergamot. The blue things are cornflowers. Technically, that makes it "Lady Grey" tea, but that's a Twining's trademarked name.

Boil, drop to a simmer, add loose tea and brew for as long as you want. Mix in sugar early on too. Strain as you pour it out. Essentially like Chai, without the spices...

This is a complete game changer: heavy cream! My brewing routine of 12g (3 tbsp) loose tea leaves, 425ml 80℃ hot water, 50g sweetened condensed milk and 40g of heavy/whipping cream, always turns out superb. Tips for best tasting tea, DO NOT use boiling water. Hot water is when it just starts to bubble. This is crucial between floral fresh vs bitter dull brew. The very same concept of coffee brewing applies to tea! Never underestimate trivial things.

Ok ok ok now hear me out,, try evaporated milk add it to the tea as it boils,, when it gets to the right shade of black,, even better try flavoring it with a slice of ginger let it boil with the tea.. you can add cardamom and saffron at the end .. it goes well with tea similar to Indian tea.. sugar wise if Im feeling fancy Id start with caramelizing some sugar in a pot just till its light brown add the water melt it the add the tea and spice boil it well then add the milk boil it for as long as I can to make it quite condensed and .. enjoy 👌🏼

Jokes aside, I really enjoyed this video. I, myself, have been making milk tea for maybe 8 years and learned a lot of stuff from testing it out, like you. Found myself nodding when you said milk makes the tea too watery and how too much condensed milk makes it taste thick and weird. As i relax and do the mundane, 5 mins after to take another sip by sip in a row to enjoy more of the aroma and it will be the taste of the tea dominating the milk. Another 2 mins and it will be the other way around, vice versa. Seriously back in the day everything was much simpler unlike today, everything has to be complicated & technical lol.
