Wa alaikum salam. Different sponges bananay ka method bhi different hai. Sub sponges keliye aik method hi use nahin Kar saktay. Mixing technique say sponge ke texture pay bohat effect hota hai. Ap kis recipe keliye puch rahi hain?

Depends ke apka cake kis tarah ka hai aur mousam kesa hai apke yahan. Garmiyon ke mousam main hamesha main overnight freeze karti hun apnay cakes ko. Jitni shaded heat hoti hai cake customer tuk pohanchtay huye normal temperature pay aa jata hai. But please do what works for you according to your cake. Yeh mere liye work karta hai for my cakes.

Sponge ke edges hard tub hotay hain jub apka sponge over bake ho jaye ya high temperature pay bake huwa ho. Next time ap 5 say 10 degrees kum rakhye ga temperature aur sponge bake honay ke 10 minute ke bad usay cling wrap karke rakh dain. Insha'Allah hard edges ka issue solve ho jayega.

Honestly, I have never made fondant since I started buying ready made. I would suggest you go for ready made fondant as well. There is a very easy method for home made fondant, just melt marshmallows and add icing sugar to the melted marshmallows. Keep adding until you reach your desired consistency. Tastes really good, and works just like ready made fondant.
