Beautiful Layer Jelly Cake Recipe 古早味千层燕菜糕食谱
❤Ingredient 材料:
●1st Layer (Green color) 第一层(深青色)
Pandan leaf 4pcs 班兰叶 4片
Water 500ml 清水 500毫升
➡️Pandan juice 800ml 班兰汁 800毫升
Caster sugar 95g 细砂糖 95克
Agar powder 2+2/3tsp (7.04g)
燕菜粉 2+2/3茶匙 (7.04克)
Jelly powder 1/2tsp (1.32g) 果冻粉 1/2茶匙(1.32克)
●2nd Layer (Light Green color) 第二层(浅青色)
Add 1tbsp of coconut cream into remaining liquid of 1st layer
在第一层剩余的液体加入1汤匙浓椰浆
●3rd Layer (White color) 第三层 (白色)
Coconut cream 100ml 浓椰浆 100毫升
Water 700ml 清水 700毫升
Caster sugar 100g 细砂糖 100克
Agar powder 2+2/3tsp (7.04g) 燕菜粉 2+2/3茶匙 (7.04克)
Jelly powder 1/2tsp (1.32g) 果冻粉 1/2茶匙 (1.32克)
●4th Layer (Dark Brown color) 第四层 (深褐色)
Palm sugar 120g 椰糖 120克
Water 800ml 清水 800毫升
Agar powder 2+2/3tsp (7.04g) 燕菜粉 2+2/3茶匙 (7.04克)
Jelly powder 1/2tsp (1.32g) 果冻粉 1/2茶匙 (1.32克)
●5th Layer (Light Brown color) 第五层 (浅褐色)
Add 1tbsp of coconut cream into remaining liquid of 4th layer
在第四层剩余的液体加入1汤匙浓椰浆
●6th Layer (White) 第六层 (白色)
Remaining liquids of 3rd layer 第三层剩余的液体

hi小黄鸭,想请问一下为什么我的黑糖层会很快溶化?我做了几次,每次都是把黑糖层放最后所以摆盘时,它是底部那层,几分钟-10分钟开始就会溶了。都有把它煮滚

I made this and it was beautiful. I also noticed that coconut cream not enough for this recipe. No coconut “taste/ flavor/fragrant”. Should add more coconut cream. Thanks for sharing your recipe. Rgds 🇲🇾

I have a question: I always soak agar in water at least 30 minutes even over night based on what I have learnt. Here you cook agar directly in milk/coconut milk. Could you tell me any differences between 2 ways? Does the cake melt faster without soaking in water?

You can try @asian.groceries. most of thai desserts use jelly powder as well.
