The color thing is just for graphic design. Those discs are the accretion discs. All the matter they are consuming gets heated to millions of degrees. And they aren't actual holes. They are points in spacetime where the density of a stars core pretty much reaches infinity which in turn reverses the laws of physics. Once you reach the event horizon time switches places with space and all points in the black hole point to your future which is the singularity or the old core.
