Hey Laura! thank you for the dinner idea! I made this for me and my parents and it was AMAZING! put a little Sriracha in the broth and soy sauce mixture with a touch of sesame oil and it tasted amazing. threw in some toasted sesame seeds as well. they loved it!

I just made this and I used chicken instead of beef and uses sesame oil because I like it lol and it was FANTASTIC!! Way better than take out !!!

I have a Lagostina wok/frypan and just love it. I also have a stainless wok with the base ring and rack. I like the lagostina way better because it is so easy to flip-toss the food in it.

Finally, someone else who understands how overpowering sesame oil can be. I see others on KZbin adding tablespoons of the stuff to their stir frys. I can't put in more than two drops without it tasting entirely like sesame.

I'll second that. Sesame oil is very potent stuff. I never use more than a few drops. Very small drops :)

AMEN!! Anything more than a couple TEENSY drops is just too much-- but I do really like the flavor it adds. Feel like that's what makes it taste like my favorite take-out place...

I followed it exactly initially then realized I bought about half a pound more of meat than the recipe called for so I winged it thereafter. I just threw everything in to taste - it turned out really good. The only thing I'd suggest is preparing all of your ingredients before hand, like Laura does, because it makes it so much easier. I almost never cook from an actual recipe, I throw things together so having a tablespoon of this or that was odd for me, lol. I bought more meat to make it again this week (my hubby loved it), & will totally wing it now that I know the basic ingredients. I hope you make it & love it as much as my husband and I did. :) Good luck!!

Woll Cookware makes quite a good chinese wok for a western (German) brand. A good wok needs to be thin enough so the heat transfers quickly rather than the need to "retain" heat compared to western skillets. It also need to be light so you can handle it easily to help stir the content from the bottom up quickly during the cooking process.... hence, "stir" fry. Woll's Saphire-Lite or S-Lite range has a 30cm wok, you can check that out. My mother-in-law is chinese and cooks solely chinese food, we got her this one and she's very happy with it. I'm a new subscriber actually, and your channel has become my holy grail for cooking EVERYTHING! Thank you for sharing these awesome recipes!

I have a family of 5 and I love to make this. I usually toss in some fresh corn, green beans and sliced carrots. We just call it "country kitchen stir fry". This same amount happily feeds my hubby and I as well as our teen daughter, pre-teen daughter and 9yr old growing boy. :) Feel better soon Laura.

Love your show Laura! HUGE FAN! :-) Suggestion-you should do a live show all about cooking BASICS. Or a normal show and just ask people for questions/ideas ahead of time. How to properly do basic things in the kitchen that beginner cooks may not know the right way and that you don't explain on your shows because they are just so basic. Maybe things like how to cut certain things, basic rules for sautéing/steaming/roasting veggies, etc. Many many other things I just can't think of more right now haha :-) I think a lot of people would like that. Also a Laura's favorites type of video, what you eat for breakfast, snacks, fav foods, etc.! Love you Laura! And Joe :-)

Beef and broccoli is one of my favorite Asian dishes. Flank steak is not as scrumptious as sirloin, but is an inexpensive alternative for those on a tight budget who would still like to enjoy the dish. Toasted walnuts sprinkled over the top is the pièce de résistance, IMHO, further accentuating the earthy flavors of the broccoli and beef. I’ve owned every kind of wok from stainless steel to a Farberware electric wok (no longer manufactured, unfortunately). The electrics cannot compete with a high heat burner, but they still have a place in my heart; in college, I survived with the Farberware exclusively and made everything in it from legs of lamb to pizzas, and every kind of Asian dish including steamed sponge cake. But, the heat NEVER approaches that of a HIGH HEAT burner; again, the delimiting factor is always how many BTUs you can get off of your burner. After saying all of that, I will say that the plain, nonelectric stainless was my LEAST favorite. I prefer the economical carbon steel which you can still get at places for $20, but I also have a warm spot in my heart for the Taiwanese style carbon steel which is a one-piece. It has a nice gently rounded “dish”. There is no wooden handle but if worried about heat, a wooden dowel can be purchased and retrofitted. Carbon steel heats up fast and the only proviso with this one is to treat it as you would cast iron-wash it with hot water only, no soap; after which you oil and dry it immediately. Don't waste money on any nonstick surface woks; manufacturers of nonstick cookware advise against using them on high heat, thus precluding use for high heat stir-frying. Whichever wok you choose should be of adequate size for the type of cooking you plan to do. Obviously, if you’re going to stir fry for only one or two, you don’t need a huge wok but if doing so for 8 people, you’ll require a much larger wok unless you don’t mind spending your time in the kitchen remaking the dish in batches. Woks with lids are also nice to have but you can improvise. By the way, I have a large, AllClad d5 "Essential Pan" that cost over $250 that I sometimes use for stir-frying. It cooks very similarly to the $20 carbon steel wok but does not have the advantage of higher sloping sides. The AllClad heats up more slowly but retains heat longer-sometimes a disadvantage when you want to pull the dish off the heat before something overcooks. The AllClad will stick occasionally because it is not "seasoned" and it will never be "seasoned" unlike a well-loved and used carbon steel pan because it is not intended for a buildup of carbonized oils as is the case with a carbon steel wok or cast iron pan. Love my AllClad but it would never replace my wok. Happy wok'ing! :-) P.S. You are much more generous person than I because there are three things I NEVER loan or give away: my books, videos or cookware; I'll purchase new ones for friends but never allow my own out of my sight.

Hi, Laura found your beef and broccoli recipe today. I just finished making it a little while ago. I added two shredded carrots at the very end so as to not over cook. I did of course shred/clean off the outer most part of carrots prior to adding to pan. All together delicious. Thanks and take care. Keep on cooking!

I've watched a few Asian videos . They suggest using a corn starch on your beef before cooking. The thought here is the corn starch helps get that nice Browning on the outside, while keeping the meat nice and tender and juicy. The other idea is using both a light soy sauce, and a dark soy sauce. The darker one provides great color and just a touch if sweetness. Just a thought here for you to try .

I normally marinate my beef with soy sauce and a little bit of cornstarch just like Laura does but I also add in 1 tsp sugar and 1 tsp of oyster sauce, it's makes the beef taste absolutely delish. Please give that a try Laura!!!

For those of u who want to try this out: My boyfriend tried this recipe and thought it was very good. It was his first time doing a stir fry. He tried to work fast but still overcooked the meat and broccoli by one minute (did 3 min in total for each). So if it is your first time doing a stir fry, try using a timer and make sure all your ingredients are ready and next to u, it could really help, that extra minute really made the beef tougher and the broccoli soggy :) the ginger and brown sugar were very well balanced and came out subtle, so you can double the qty if you like it gingery or more on the sweet side.

We have two woks one is the Le Creuset which is a great wok but OH SO HEAVY! Our second one is one we bought in the Asian grocery store. I would recommend one of these as if you treat it right and season the metal as you should it will last for years. OMG! First, that looks amazing, as always, second, I thought I was the only person who like leftovers cold from the fridge! I especially love cold cashew chicken! Not to mention cold spaghetti and meatballs. So I guess if I'm a freak, I'm in good company! LOL!

I have two woks - one is cast iron and the other stainless steel. I love them both. I can't remember the cast iron brand, but the stainless steel is a Calphalon. Flat bottom is by far my favorite to work with.

If you are planning to buy a wok, get one made of carbon steel. It's recommended for most oriental cooking and develops that toasted or charred flavor through time. Properly seasoned, it becomes non-stick. Also heats up and cools quickly.

Dear Laura, my wife and I learned from some Asian neighbors we had several years ago, that the addition of Oyster Sauce to the Soy Sauce and Corn Starch (and the sugar of course) on Stir Fry in general but definitely on Beef & Broccoli made a difference. They usually used Peanut Oil for cooking and added just a few drops of Sesame Oil at the end along with toasted sesame seeds and green onions. Try it. P.S. Keep up the good work!

Looks good Laura... here's the chinese "Mother" sauce I use for all my stirfrys. 3 Tbsp Soy Sauce 2.5 Tbsp Sugar 2 Tbsp White cooking wine 2 Tbsp Oyster Sauce 1 Tbsp Hoisin Sauce 1 Tbsp Dark Soy Sauce 1 tsp sesame oil 2 tsp Green Onion roots 1.5 tsp minced ginger 1.5 tsp minced Garlic pinch white pepper 1.5 cups chicken stock (hot) Pour hot chicken stock into other ingredients, and let sit till it cools, strain and use. keeps in fridge for about 2 weeks, or freeze and use as needed.

Hi dear Laura, first of all my best wishes for the new year and good to hear you're getting better. I love this recepy and I think I would add some sesame seeds or crunched , non salted cashew- or peanuts...:-) About the wok; recently I purchased a Ronneby Bruk (swedish). A light Iron cast Wadjang actually. It takes some more effort in maintenance but they go along a life time.

Our variation is similar but adds oyster sauce, rice wine vinegar, strips of red bell pepper, halved mushrooms, and 1tsp 5-spice powder. Such brief cooking means cheap cuts won't do, so use only best sirloin or even fillet (tenderloin) if your budget allows (cut across, not with, the meat's grain). ** Laura, love from the UK and here's hoping you get well soon.

Laura! you're making me so happy with these Asian dishes! I love them :) what I like to do is put a little bit of oyster sauce (about a tablespoon or 2 depending on the amount I'm making. Like a 1/3 oystersauce to 2/3 soy sauce ratio.). It really creates a extra layer of flavor besides the soy sauce.
