Beef Enchilada Casserole

This was a genius move Tali. I went to Cosmetology School in Lubbock, TX, in the 1980s. I was taught by my roommate's mother and sister how to make real homemade enchiladas. Your casserole reminded me of this. They would fry their corn tortillas and then roll them up with their meat mixture and onions, as well with the hand shredded cheddar cheese. Then, finish off the rolled up enchiladas/ taquitos with a real homemade enchilada sauce with cheese on the top. Of course, they would make a huge pot of frijoles (pinto beans) as a side dish. Pickled jalapeños and pico de gallo and chopped white onions were used as condiments. So delicious 😋 Tali, you are an amazing 👏🏾 ❤️ cook! I watch your cooking channel quite frequently. You made yourself a Mexican lasagna . My aunt used to brown flour for her sauce as well. I'm not sure what she used for the sauce she made her own. Wish I would have asked her. She's in heaven now. Tallie Faye, Today is Wednesday, Sept. 24, 2024 the day after you made this video. I decided to make your recipe but with the whole corn tortillas because, I had them,lol😂I’ve made this recipe before using someone else’s recipe for the sauce and it didn’t come out to my liking for whatever reason. So I thought ok, I’m going to make Talli Faye’s recipe and see what happens. Walla, perfection ❤ My husband loved them, O yeah, I made the rolled enchiladas 😊 I made extra sauce and made some rice with it. Just have to be careful and put plenty of liquid in it, let it cook down to almost done THEN add how ever much sauce you want, it was the best rice, soo good❤ so thank you for all you do. You inspire me. Hubby and watch you over rdinner and laugh. You have a gift to do that and I never fail to say after the video, Man, I Love her❤❤❤❤❤❤❤

He was in his Air Force uniform and ordered a chocolate malt, that’s what they called it then I guess. So Mom waited on him. Next thing you know, they got married and lived all over the world, Military. So I’m an Air Force brat😊 My 1st husband, Rip Kenny, was Army. So I followed in my Moms footsteps and married Military and we lived all over the world. I now live in Salinas, Ca /Monterey now for 46 years married to my 2nd husband for 31 years. You remind me so much of my Mother, Rip Mom. Regardless of where we have lived, she never ever lost her Tx accent. Watching you and listening to to makes me feel like she is here with me, Thank you for being you. I use to tell her that and she would say, I don’t know how to be any body else🩷

I love Enchilada’s anyway they are made and I think your Enchilada Casserole looks so delicious Talli Faye !! Thsnk you so much for making the Browned flour gravy to add the sauce to make it taste more Mexican traditional sauce , and the tip to cover raw onions with something to keep them from burning, I never thought of them burning before the dish is done !! You are such a wonderful help in so many ways not just in cooking but in tips how to make a dish better by just doing 1or2 little things that make a big difference in the taste of the food your making !! Talli you look just fine. You always do. You’re a fine cook as well. I have a very old recipe for pan enchiladas. It’s probably a Campbell’s soup recipe from the 1970s. I looked all over for it and found one that is close. It’s got cream of chicken soup in it. I can’t wait to try it to see if it’s the right one. Probably very close. It was my sister’s recipe and her kids favorite. Unfortunately she passed away and I lost my cookbooks in a flood. I’ll do my best. The kids will be happy.

I guess it’s kinda like a mol’e… it’s just enchilada gravy to me lol… the tortillas are just done long enough in the oil to make them pliable to roll up but it also very slightly cooks the raw meal…not crispy..♥️♥️♥️

@@jerikay well, the process that I use in particular, I prefer the canned sauce ( it doesn’t have to be the off brands, I was just pointing out that it was worthy of trying) but my girlfriend loves the packets like you’re talking about so really it just a preference I believe… To me they both have great tastes! I have never used the red tortillas only because I never think about picking them up lol 😂…

Hi Talli Faye! I made this 2 nights in a row because we loved it so much! This recipe will satisfy that urge to go out to eat enchiladas! I was a little Leary of the canned enchilada sauce, but I wasn’t scared! lol, your special method of adding that extra homemade gravy makes it really tasty. Next time at H‑E‑B, I’m buying several cans of that enchilada sauce so we can have this casserole any time we want….of course I used red corn tortillas cuz that’s how we roll!

I would suggest to give your sauce even more flavour: Add 11/2 to 2 tsp of beef powder to the water and about the same amount of Tomato Paste. But yours looked great!

You don’t even have to put cumin in it if you don’t want to!… I’m just one of those “more is better “ people 😂😂… You just put it in there to your taste 😍… The dish will be delicious with or without it!
