Beef Enchiladas and Mexican Street Corn
------------------------------------------------------------------------------------------------------------------------------------------------
Beef Enchiladas
Ingredients:
1 lb ground beef
2 cans (10 oz) Old El Paso™ Mild Red Enchilada Sauce
1 can (4.5 oz) Old El Paso™ chopped green chiles
1 package (8.2 oz) Old El Paso™ Flour Tortillas for Soft Tacos and Fajitas (10 Count)
1 1/2 cups shredded cheddar cheese
Heat oven to 375°F. Spray 13x9-inch (3-quart) baking dish or pan with cooking spray.
1. In 10-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in 1/2 cup of the enchilada sauce and the chiles.
2. Spread 1/2 cup of the enchilada sauce evenly in baking dish. Spread 1/4 cup beef mixture down center of each tortilla; sprinkle with 1 tablespoon cheese. Wrap tortillas tightly around filling, placing seam side down in baking dish. Top with remaining enchilada sauce. Sprinkle with remaining cheese.
3. Bake 20 to 25 minutes or until hot and bubbly. Let stand 5 minutes before serving.

Mexican Street Corn Salad
INGREDIENTS
2 Tbsp unsalted butter
4 cups corn kernels (fresh or frozen)
1 tsp minced garlic
1/3 cup mayonnaise
1/2 tsp chili powder
1/2 cup Cotija cheese
1 Tbsp lime juice, fresh squeezed
1-2 Tbsp chopped cilantro (optional)
kosher salt, to taste
INSTRUCTIONS
1. Melt butter in a large skillet (preferably cast iron) over medium-high heat. Add corn kernels and cook, stirring occasionally, until cooked through and slightly charred, about 8-10 minutes. Add the garlic the last 2 minutes of cooking.
2. Allow corn to cool slightly. Stir in mayonnaise, chili powder, Cotija cheese, lime juice, and chopped cilantro. Season to taste with salt.
3. Serve warm or cold. Store leftovers in an airtight container in the refrigerator.

Hi Calvin. Hi Marie. It's pronounced "ko tee ha". I love Mexican food so this is looking really good. If you try all the different Mexican cheeses, you'll notice they are very different than American types. I guess that's what makes their foods so tasty. I grew up in California, so I could get my hands on different ones. I hope Marie is feeling a little better and that you both can get some rest this weekend. I'm gonna make the corn for sure. It’s pronounced Co-tee-ha. J in Spanish is pronounced as a H, like jalapeño. We love this cheese. It’s like a Mexican Parmesan cheese. A staple in my kitchen. Everything looks delicious.

Looks delicious! I make these using corn tortillas. I don't like anything too hot, so I add a small can of tomato sauce to my Enchilada sauce. Great video, thanks for sharing.

I prefer the minced garlic in the jar.i keep 3 jars stocked up in my pantry. It's so much easier than using cloves and it tastes just as good. Your meal looks delicious. Watching from Pennsylvania. I make a Taco enchiladas and they are delicious. ❤

Calvin heat those tortillas in the microwave for about 30 seconds wrapped in a paper towel it makes them more pliable and easy to fold and work with.😁 Looks delicious 😋

Hi Calvin and Marie, Those enchiladas and corn look delicious 😋 I enjoy watching you cook and hope to see Marie joining you in the kitchen again. Praying for her to be feeling better very soon. I enjoy watching your videos and always look forward to the next one. I use fresh garlic cloves. Canola oil is not healthy like people think. Its highly processed. I use avacado oil. It has a high smoke point. I also use extra virgin olive oil. Which is supposed to be about the healthiest oil to use. But, i only cook on medium heat and 375 to 400 degrees in the oven. Because, olive oil doesn't have a high smoke point. God bless you both and your family.😊🙏

Looks delicious. I love cilantro, but I know some people just don't care for it. I hear it has something to do with a gene some people have that makes it tastes like soap. I've had the corn on the cob version of the street corn, but this way, I can make it anytime. Praying that Marie improves and heals completely, and hope your therapy on Monday goes well. Looks good. Queso Fresco cheese is usually easier to find if you shop at Walmart. It's also cheaper in my area. 🤗

Hello from KY love your channel ❤️.Marie stay off your feet as much as possible but don't be bedridden.Once you see your doctor he'll tell you what to do to help the pain.Calvin I use minced garlic in water.I get 8 ounces at the dollar tree for #1.25 verses Walmart same amount for $2.67.Our oven broke but I just found out you can use a pyrex dish in the air fryer.Yea!!!!!!.I will be making your enchiladas very soon.Both of you need to rest up.Take the weekend to just rest.😊

Hello Marie and Calvin from Texas! Ms. Marie, how is your hip? I will be 56 in July and was told in April that I need a right hip replacement. My Doctor joking told me most people wait until at least on their 60's to need hip replacement. When I got down off of the exam table, both knees and shoulders were cracking and popping. He as wow you're noisy!. I got out of my at work at the end of December 2022 and I had excruciating pain. Progressive it has gotten worse. Unfortunately, my job fired me for being out too much even with doctor's notes for all absences. I hope you get answers when you see your PCP. I work in medical field so, pretty sure they are tell you to sew the Ortho doc. Take care. 😬🇨🇱👋

That's what we do in southern Colorado, corn for enchiladas. We fry them on both sides in oil for a brief second before filling to make pliable.
