PIZZA DOUGH RECIPE:
500g 00 Flour
275g water
2g yeast
15g salt
15g warmed beef tallow (or EVOO)
Mix slow, bulk ferment for two hours, separate into 270g (ish) balls, ferment for another hour then ferment overnight in the fridge.

This was definitely a fun one! I use beef tallow when making tortillas, and they come out fantastic. I honestly have never thought about incorporating it in pizza dough. I'll definitely give it a roll next time we have a pizza night. We made a few panuozzo and a pizza or two using your dough recipe from your Panuozzo Video. I did them a little different than you (I'll send you pics so you can see), but it all worked out great, and is going to be a new staple for left over pizza dough, or even on pizza night. Appreciate the recipes and all of your content!

I found that shortening gives a MUCH richer flavor for my tortillas, and pan breads. Bacon fat works great too. But shortening really does something different.

Yes! Shortening is great too especially since it doesn't really change the flavor of what you're making. Just enhances what you're making.

Both pepperoni and cheese should show so you can get burnt peaks on each. So the best way is a layer of cheese, then a full layer of pepperoni, then a light sprinkling of cheese on top of the pepperoni.
