Have you ever tried making Jerky from other meats? Lamb Jerky? Lion Jerky? I wonder how different they taste like if you compare several different meats.

2:40 - Did you say "cut against the grain" twice? "Cut against the grain will make more tender, but if you like more chewy, then cut against the grain". ??? (as opposed to cut *with* the grain?

Agreed on that price. My and the wife went to a jerky store and the prices were unreal. I'm thinking the oven can't get that moisture out as the dehydrator can. Fun show. Cheers.

I use a dehydrator, 165 degrees for about 8 hours. We like ours *completely* dry to the point of being crunchy. It rehydrates in your mouth and has a great flavour. Plus, completely dehydrated, it will store longer. But, like your house, that's never gonna be an issue, anyway.

Very interesting as always. The best biltong is made from Silverside with yellow fat. Biltong can also be made with a ton of different flavours.

Ok, Ninja, it's me again... And I'm a pro at jerky. Oven, dehydrator or smoker, I'm your man. My friends will buy mine before any from the store.. You can use an oven, if you have a connection oven that goes to 170 or below, you're golden. Otherwise you have to do the "fan dance" like in your video. 😉 Ovens still need babysitting because you'll need to rotate the racks, no matter what anyone says. 😀 That's jerky. I have the old, Ronco, round, "on or off" dehydrator with adjustable vent on top. That's as basic and cheap (look on eBay) as it gets and it makes great jerky. You just have to rotate the racks regularly and test pieces on each level, too as they may have to rotate up or down. Newer dehydrator have temp control but rotation is needed. A smoker (or a gas grill with a smoke box or foil pack) makes great jerky. My electric has great temp control and adding real smoke (liquid smoke is "real" but not the same) always makes things better. Just set to lowest setting or 150°F, give or take, just remember your drying the meat, not cooking it. Rotate the racks every so often (you can tell by feel when some racks are dryer than others, then give 'em a shuffle. As for the meat,, round is great.. Try to get as close to "middle round" as you can, it's "tenderer" and low fat and tastes. I use seasonings I got in a variety pack, thry come with a pack of seasonings and a pack of curing salt. They have pepper, teriyaki, etc. and that's a good choice for a Rocky to get the feel of things. They come quite a few to the pack and are reasonably priced. Then there's the "do it your self" seasonings and marinades, just use what you like and there are as many "recipes" as people on KZbin, etc. but, the simplest way is to start with the basics of salt, pepper and maybe some cayenne (just a little) for a bit of kick and see what happens. Theeen there's the liquid marinades. Teriyaki, worstershire (were-stir-sure) sauce, a little soy or liquid aminos (soy substitute for marinades, etc. with less sodium, tastes great) and some lemon juice for some flavor and to "protect" the meat ... In about 3-2-1-1 ratio, "let soak over night" and you've got a great marinade for jerky, steaks, roast injection, you name it. Trust me, Ninja!!! Try it! ;) Then lay out your strips, sliced about 3/8" thick, (gives you a better bite and "chew" than thinner jerky) and you can't be beat. Making your own jerky is very satisfying and you can have the thickness and flavor YOU want. And the price drops from stupidly expensiveto reasonable... Just remember to give the meat a little time in the freezer before slicing and slice against the grain. :)

Personally what I do is 2-3 hours in the smoker the 3-4 in the dehydrator it’s more work but it makes my favorite cowboy style jerky very dry and crispy jerky chips not tough but amazing I love it brittle it’s my potatoes chip substitute

Should have also used a smoker, it's my favorite way, I use a little chief smoker without the cardboard box to keep it a bit cooler so it doesn't cook it.

NEVER would have though of fish & Oyster sauce. First batch marinating now. I also recently upgraded from a plastic dehydrator to a proper metal one and the difference in time and even curing is HUGE. Forget 5hrs, mine is done in 1.5hrs.

Use a dry box. Add a fan to it for circulation. Air dried is so much better.

Make a salty brine. Add apple cider vinegar to where you can dip your finger in and get a little pucker. Set your meat in for 2-3 mins. Place in dehydrator and do a little salt topper. Boom. Done. My kids are addicted to it.
