a tip that someone gave me a few months ago was that before you measure honey: put a little drop of neutral oil in the measuring cup before you pour the honey in it! Oh boy... 1) i‘m pretty sure he doesn’t know about the shelf life, seemed like he wanted to stay safe to not poison people, so he avoided concrete time limits. 2) it doesn’t really matter as this is more of a dish preparation video than an exact recipe or a historical reconstruction, there are other channels for either of that. 3) is curing salt really that crucial in the process? I thought the main benefit of jerky was that the dryness keeps mold and bacteria off by itself, so even completely unseasoned jerky should be safe to eat weeks after preparation.

No, he's not credited as the editor. All of it's Alive is edited by Matt Hunziker :) but I'm sure they all have a lot of creative input in the process.

I make all kinds of jerky regularly. My favorite is Biltong (South African). You can find the recipe online and I do a twist with mine, I use balsamic vinegar and I make sure to brown the coriander.

@@heyitsjustme.680 I usually use a little demarara sugar in my rub but it can be easily made without that. I've tried some biltong from South Africa and they do not have any sweetness to them. If you really want to make it not sweet you can use malt vinegar instead of balsamic vinegar.
