Hey - where do you source your wood chunks? I'm in Dublin and not been able to find any suppliers.

If you can't find anywhere local, you may need to look online. Local garden centres will likely have Weber chunks and chips which are decent but the range isn't what it used to be. Smokewood shack has a great range of woods and they will deliver to Ireland. I tend to do one big order that will keep me going for a while

I am watching this as I plan to smoke my first beef short ribs on my new WSM smoker first thing tomorrow (weather permitting). I've had success making these on my Weber Kettle using a snake method but wasn't sure if was to cook the ribs with the water bowl or not, however watching your clip has reassured me, water bowl it is! 👍🏾
