Beef Stroganoff is definitely Russian Aki. I like your take on yogurt instead of sour cream. I always serve it over rice, but that is your choice. Also, I use rump steak. I live in New Zealand and we are big meat producers, but the cost of fillet steak here is similar to a second mortgage. Mou anixes tin orexi.

It's not Russian but French according to cooking Larousse. Any chef's book worldwide. Frying mustard and flour is killing any recipe, not to talk about sauté the onions along with mushrooms. I can describe it as a failed alternative of the original french recipe.

I can not believe all the negative comments for this recipe. Cooking is interpretive, make it however you want. Pasta or rice or potatoes. Whatever you like. You always inspire me and especially that day you made Mille Feuille Cake This cake is one of my best memories of Xilokastro when my Thia Dina said ella Manoli tha se goraso kati poli oreo. I add butter with the olive oil at the beginning and at the end to give it a silky rich finish. Red wine usually goes better with a red meat dish but white wine works. Crushed garlic and heavy cream is also added for that next level texture and taste.

it was actually an Irishman who took his French wife´s name to avoid being detected in St. Petersberg, as Ireland was part of the British empire at the time, and Russia and Britain were at war. It is said that the real pronunciation is trogonov as there is no ´s´in Irish. Beef trogonov as it is still known in north west Russia to this day

Great recipe. I'd definitely use a stainless steel or cast iron pan to build up some fond that will be deglazed later. Which gives a much better flavor

Interesting that you use yoghurt rather than sour cream. A few years ago after a visit to The Balkans I tried thick yoghurt in a recipe which called for sour cream, just to see if it was acceptable, simply because yoghurt is an ingredient to hand, and unless I have another recipe to follow, some of the sour cream would go to waste. So far, I have yet to find a recipe where the yoghurt is not a good substitute - in most cases, I actually prefer the lighter texture and flavour.
