Thanks for your recipe, I add a bit of rice vinegar for tang. I also use ketchup and brown sugar. Since I like tofu, I add some of that as well! 😊

I don't doubt this is good, but my grandfather and uncle both had takeout restaurants. One in Florida one in NYC this dish is supposed to be a redish sauce (not on the their takeout menu only for Chinese who asked for it). I remember it was pretty sweat and and strong garlic flavored. This looks more like American takeout beef with broccoli type sauce.

FWIW - That's not cutting against/across the grain. You cut along/with the grain. You can see the long strands of meat running all through the slices you've cut.

Not sure how you can call this authentic without fermented black beans, I've talked to chef said Chinese restaurants and they all use it

Top Tip - Don't use garlic or ginger from jars, they are full of rubbish which will ruin your dish. Frozen is fine.
