Beef tongue
1 beef tongue
1 white onion peeled and in 1/2s
2 whole cloves (pushed into the onion)
2 bay leaves
10 peppercorns
Big pinch salt
4L water
1. Place everything into a pot and bring to a simmer. Turn down as low as it can go and cook for 4 hours or until the meat is very tender.
2. Turn off the heat and let it cool down enough that you can handle it. Peel the beef tongue skin off and cut away the bottom section.
3. Dice the meat fine and serve warm. You can also reheat it in a pan to get it crispy.
Salsa
1/2 white onion
2 jalapeños
3 bull horn pepper
5 garlic cloves, peeled
2 tomatillos or a green tomato if you can’t find one
Olive oil
Salt to taste
Juice of 2 limes
1 bunch coriander
1. Pre heat your oven as hot as it will go.
2. Place all the veg onto a tray, drizzle with oil and season with salt. Place into the oven until you have a good charred colour.
3. Put everything into a blender and blend until smooth (but not puréed).
Add to your beef tongue tacos or any taco really. Enjoy!
