Diwali calls for sweets, and what better way to celebrate than with a sweet treat that's both delicious and nourishing? Try our Beetroot Almond Halwa-a guilt-free dessert made with clean, wholesome ingredients. Perfect for your Diwali spread!
Ingredients:
3 cups grated beetroot
1 cup grated coconut
1 ½ cups jaggery (add up to 2 cups if you prefer extra sweetness)
A handful of cashews & pistachios
4 cardamom pods, ground
4 tbsp coconut oil
1 cup almond flour
Instructions:
1. Heat coconut oil in a pan, add grated beetroot, and roast for 7-10 minutes until the rawness fades.
2. Add grated coconut and continue roasting for another 5-10 minutes.
3. In a separate pot, melt the jaggery with 2 tbsp of water, strain, and set aside.
4. Mix almond flour with beetroot and coconut, then pour in the jaggery syrup. Let it cook for 25 minutes, stirring occasionally.
5. Add the ground cardamon and turn off the heat. Spread the halwa on a greased plate to about 1 cm thickness.
6. Garnish with nuts and rose petals and cut into wedges.
