Hello Ravioli lovers! If you want to know how to make Beet Root Ravioli from scratch, you should watch this video. I am explaining step by step how to colour your Pasta Dough and how to shape the raviolis. I am using a filling which is made of Goat Cheese, Potatoes, Walnuts and Lemon. I am serving the Raviolis with Goat Cheese, Lemon Zest and Sage.

⫸ INGREDIENTS (4 portions)
DOUGH
◆ FLOUR 3 1/2 cups | 550 grams | 19 oz
◆ EGGS 2
◆ OLIVE OIL 1/2 teaspoon
◆ SALT 1/2 teaspoon
◆ BEET ROOT (cooked) 2 medium size | 100 grams | 3.5 oz
FILLING
◆ GOAT CHEESE 100 grams | 3.5 oz
◆ POTATOES 4 small ones | 200 grams | 7 oz
◆ WALNUTS 1/2 cup | 45 grams | 1.5 oz
◆ LEMON JUICE 1 tablespoon
◆ BEET PUREE 1 tablespoon
◆ PEPPER a little bit
◆ SALT a little bit
SERVE WITH
◆ CRUSHED WALNUTS a few per portion
◆ GOAT CHEESE 1 tablespoon per portion
◆ SAGE a few leaves
◆ GARLIC 1 clove
◆ LEMON ZEST a bit
◆ PEPPER to taste
