A common way to cook Beets in South india, is to cut it into small cubes/grated , boil/microwave/roast it until soft then saute with either spices or coconut. It'll go crispy chewy and incredibly sweet. Well made beets are one of lifes greatest pleasures

@@deadfr0g the usual spices are a little turmeric and a chilli powder. The combo of hot and sweet is ridiculous. Use whatever you have though, sauted beets are delicious any way

Hahah, that’s awesome, I was already thinking about turmeric! That one makes so much sense to me because it’s already a little bit earthy and I also think it plays really well with mild sweetness... which is exactly what you get out of good beets. Also it’s kind of funny to me because turmeric is one of the only ingredients that can stain things as much as beets do. I should pick a wooden spoon and turn it orange.

It's amazing how many good pairings there are for beets! One of my favourites is beets with anise/fennel/licorice flavours. Also roasting beets until they go black and then letting them soften back up in olive oil ... they get this amazing mellow flavour of dark caramel! Also beets with smoky flavours. Also beets with pine oil and pine shoots. Also ... etc

I first discovered labneh when I was in Northern Israel. There was a period of like 2 years where I literally thought it was called "Druze Cheese", since that's what they called it on menus, and I was in an area with a large population of Druze people. I was upset when I could never find it in the US lol

Labneh is the absolute best. I make it all the time and eat it drizzled in olive oil and sprinkled with salt and sumac. So damn good.

Beets in my country are rounder. They look almost like the pictures of turnips I've seen, but beet colored. We cook them by cutting them into a small dice, around 3 mm, and stir frying with salt, chilly powder, and sputtered mustard seeds and curry leaves!

I live in the Southeast US and the beets available at my grocery stores are more like what you are describing. They're rounder and thicker, they require a bit longer cooking time, I usually do 90 minutes at 375

I think most beets available in the US are larger and rounder, as you're describing. Kenji said these were baby beets from the farmers' market, which are small, seasonal markets where farmers set up stalls and sell their produce directly to consumers. This usually results in fresher produce and more seasonal variety than we get from our large supermarkets/grocers. I've never had stir fried beets, but that preparation sounds delicious and I'll have to try it next time I buy beets!

I feel like most people who think they hate beets probably have only had them from a jar or canned. Fresh oven roasted beets are so much better than canned. "Dirt candy" is the perfect description of them

ive been making so many beet salads lately!! i use jarred beets from trader joes but they're still delicious. i use spring mix, beets, strawberries, blueberries, roasted pine nuts, and goat cheese with a shallot salad dressing. sooo good

My go to for beets is to cube them up, combine with oil and a generous amount of salt and roast at 400 for 15 to 20 minutes, stir them up and back in the oven until nicely browned. Delicious!

Up here in Alaska, I like grilled beets. Usually on the same grill as salmon. Brush with olive oil, kosher salt and grill 1/8 inch beet slices.

Also if you get your beets with the greens still on them you can rub them down with olive oil and a little salt and pepper and roast them in the oven similar to making kale chips

I used to eat the pith on thick skinned oranges. It’s slightly sweet and no bitterness unless you get close to the orange part. Made the orange last longer.

That pouch method also works really well with fish. I use whole trouts, just put some rosemary and garlic in there, along with olive oil, salt and pepper. Turns out great.
