Great Salad Bri! This is absolutely genius for a dinner party. Easy to prep all the things ahead of time and I can imagine the beets will only get better the longer they sit in the fridge. If everything is prepped and the cheeses are sitting in the oven I bet you could get this out as a first course with only five minutes of active work! totally stealing this for my next dinner party!

I made a million cheeses (beginner obsession) about 3 months ago..I got a third extra teeny fridge to hold them so I could use the bigger fridge in beer brewing. This morning I went to that room to turn on my plant light for my tomato seedlings, and I guess I forgot to turn the cheeses for a while, one of the Wensleydale w cranberries decided to ferment in the vacuum bag and blew up. The little fridge was wide open, and there was a round, highly inflated bag w the cheese in it sitting in the middle of the room..it pushed the door open and rolled out!!

@@johncspine2787 it sounds like it hasn't popped yet; if that's right, ne careful when you open it. Cheese is susceptible to botulism and if that's what caused the gas it will likely smell like rotten poop and you shouldn't eat it.

It’s caused by the use of sweetened cranberries..the sugars are fermenting..I’ll have to avoid the sweetener or sugar rather next time..but thanks for the warning. I live at higher altitude and pressure can and brew beer, so I’m familiar with all the altitude, acidity, seals etc adjustments..

@@bobby_greene on the other hand, I may just toss the whole thing. At the time I didn’t realize producers of Wensleydale do the maturation first, then chop up the cranberries into it along w other stuff and re press it. Might be safer and smarter to call it a loss..

I haven't even watch this yet, but I already know I'm going to make this. Roasted beets and goat cheese is one of my ALL TIME favorite flavor combos. I make a very tasty flatbread with that combo and coconut "bacon" (much better than it sounds) topped with arugula and lemon juice.

Hey! So my husband and I are totally loving all of these salads! Could you maybe consider doing a vid of staple homemade salad dressings? So far all the ones I’ve tried we have LOOOOOVED! Cherve is just french for lady goat...so...the ones who make milk. White balsamic is seriously one of my favorite acid options out there. Great for homemade ricotta/farmers' cheese too.

Try the Midnight Moon cheese..it’s awesome..it’s from Cypress Grove I believe, a hard(ish) cheese recipe using goat, it’s really fantastic. Has a wonderful slicing texture like a firmer Swiss or Gruyere type, but a unique flavor..
