The block button is for some really ambiguous attacks, which can be dangerous without it, but become instant garbage if you defend with the button. Otherwise is more the "spot dodge" button. Also, the game is really designed around the simple inputs, which are faster and more consistent. Using the traditional motion ones only gives you an insignificant extra damage if you use them raw (not in combo), so they don't make sense most of the time. Also the last patch lowered the damage for raw ultimates, so it is even less justified when you are using an isolated special with meter.
