We have these human towers every year on Janmashtami in India. It is called Dahi handi celebrations. It is sometimes risky, so supreme court has limited the height of human tower.

Technically, you should refer to them as The Catalans because they are from the Autonomous community of Catalonia. Some locals will get very angry if you call them "Spanish". I always use the term "Iberian Peninsula".

Its actually called La Muixeranga ... And it happens allover the medittaranean coast .. not just Barcelona .. I have personally seen these in front of Town halls and churches in the smallest of towns and village - Example Alchemesi, Torrente, Lalcudia, Suece, Cullera, etc etc though the music choosen for this is crap ... usually there is a traditional spanish or catalan or valenciano village band to play the music in a specific way to build the momentum of the people.

Castells evolved in the south of Catalonia, derived from muixeranga, and then expanded to all Catalonia :)
