Beignets recipe/New Orleans Beignets Recipe ( Fried & Baked)/ French doughnuts
The Best Authentic New Orleans Beignets Recipe
Ingredients:
for the dough:
All purpose flour-2 cups ( 250 g)
Active dry yeast-1 heaped teaspoon
Sugar-3 tablespoon+ 1 teaspoon
Lukewarm water-1/4 cup (60 ml)
milk ( room temperature)-100 ml
salt-1/4 teaspoon
Egg- 1 ( room temperature)
vanilla essence-1 teaspoon
Melted butter-2 tablespoon
Powdered sugar -1/2 cup for coating
Oil-1 for frying
All purpose flour-1/4 ( for dusting)
for baked donuts:
milk- 2 to tablespoon
butter -2 tablespoon
Baking:
Bake in a preheated oven at 170C for 15-20 minutes.
Frying :
Oil temperature: 360 F

Incredible recipe, I added cheese to the dough mix and took away the powdered sugar for a more savory vibe and worked out great.

I use this recipe for anything, I’ve even made crème brûlée donuts with this 😂 it’s not just a beignet recipe you can literally make any donut type item using this and it will always be perfect.

Thank you so much for the wonderful recipe. I'm a big fan of your channel and am so excited to try more of your recipes. I am a home chef/baker who occasionally sells. I also don't have a fridge atm so I had to make this recipe with some substitutes. I am making a triple batch with a combo of bread and all purpose flour. Used 6.8 grams of instant yeast. Replaced milk with a 250 ml honey vanilla Greek yogurt + 51 ml water mixture. Adjusted salt because I have salted butter and adjusted sugar amount by about 3 tbsp, because the yogurt already has honey (15 grams of sugar/170 grams of yogurt) & I'm not a big sweet tooth (and here I am making at least 60 beignets... 🤣💖 I do it especially for my wonderful, sweet-tooth partner and I grew up eating beignets 💖) I had to add probably around 150 to 200 grams extra flour to the dough because my all purpose and climate are really weird sometimes. I will be adjusting the rising time for or my higher altitude, dry and cold climate 😊 I'll report back with the results 💖 Update: they're absolutely scrumptious. Unbelievably soft, fluffy, moist, and with a gorgeous, delicious crust! I feel like I'm a kid again 💖 thank you

The dough is kind of very wet. it’s not easy to make. Really need to knead enough to pull it altogether. I was afraid that adding too much flour will change the texture. it seems like you almost doubled the flour. They turned out just fine?

There won't be any big difference. But I think fried taste better. Sprinkle the sugar when it is hot. No need to wait.

I just tried this recipe! The dough was VERY sticky though, I had to add almost 1/2 cup extra of flour. I wonder why it was so sticky but it’s proofing now, fingers crossed!!

Dough will be sticky, but manageable, it will get fixed while kneading. Sometimes the flour won't absorb much water, makes the dough very sticky. Then we have to add extra flour to fix it. The amount I mentioned works fine, may be bcz of the flour.😔

It's to discard the egg smell, you can replace it lemon zest or orange zest.

did you bake/ fry? gave enough time for proofing? I can't say the exact reason, might be bcz of less proofing time/ or kneading?

The cookbook yeah i think i didn’t knead it enough. i proofed it for two hours, and after cutting it for 45 minutes. it puffed up while i was frying it though, and it was so pillowy and soft

☺️. The texture is bit different when You bake, and get hard fast when compared to the fried one. You have to finish fast😄.

My dough is too sticky, everytime I add flour but the flour is being absorbed by the dough

Are you using the same measurements? Batter will be slightly sticky, if you are not able to handle the dough, you can add flour. A dry dough won't give you soft beignets. Some flour absorbs more water, so may have add 2-3 tablespoon more flour, I don't think it requires more flour than that for this recipe.

@Trinity Storey add 2-3 tablespoon flour.. don't make the dough dry. It will be slightly sticky, but get fixed by kneading.

What is vanilla essence? Is that vanilla extract?

You can use any of these. Extract is concentrated, so use 4-5 drops .
