I'm from New Orleans so I grew up making these at home, and we'd drop them right from the fryer into a paper bag filled with powdered sugar and give them a good shake to totally coat them, lol. A nice dusting is okay but we were aiming for complete coverage! Anyway, I've only made them for my husband once, so you've inspired me to give 'em another go. :)

I tried this recipe and I'll just provide some notes about my experience. I felt the amount of yeast in this recipe should have been half. The dough tasted/smelled really yeasty and, when I looked at other recipes, they had half the amount. I ended up having to add a lot more flour than what was was listed. I used a scale to weigh out the flour, so I know it was accurate. When I fried the beignets, they were more like deep fried bread and very chewy. All in all, this recipe didn't work for me. However, I still love your channel and your videos are the absolute best! I could watch you for hours. The recipe that did work for me was from Todd Wilbur, who does Top Secret Restaurant Recipes. I followed his recipe exactly and ended up with perfect beignets.

Your recipe for the dough makes it sound like the beignets don't need any sugar at all! They sound yummy. Cafe Du Monde in New Orleans serves them with sugar piled high with at least an inch and a half of sugar on top of the top layer. It is enough so if you inhale while taking a bite of one of the ones piled with sugar, you could asphyxiate yourself. Without the sugar, they aren't ( or weren't the last time I had them - decades ago) that sweet.
