I love this so much, I remember vacationing at Hainan and there was this vendor with his stall conveniently parked near my hotel. I would get these as a snack for breakfast and supper, and basically whenever I walk past his stall. They're really addictive, especially the crepes with a little spicy sauce.

on new years day, it was rainy as hell and me and my bf were walking through west london trying to find somewhere to eat (during lockdown)...we went to china town and searched...5 different places! then he spotted the crepe store and ordered one. we stood under the rain protector eating this delicious snack . honestly the best memory

I love this street food, but seems like it's not completely filled with. I remember it should add lettuce and grated potato, and also you may put sausage in addition. I tasted it when i go to Hangzhou.

I grew up in Shandong and the traditional Jianbing I remember was quite different. It never caught on as a desirable street food the way it was originally made bc it was more just for sustenance. The crepe was made from a dense millet (I think or sorghum) batter and had the consistency of parchment paper: dry, smooth, and yellow. When u put it in your mouth there’d be a brief waiting period for the crepe to soften as it soaked up your saliva before it was chewable. You’d put an egg in it and a whole stalk of scallion w some sauce and that was pretty much it (meat was still not so affordable). It was customary to eat it with hutu (congee) so you’d have something else aside from saliva to soften the crepe up. Tearing into it with your teeth was a tough job indeed…

I think the authentic ones use mixture of mung been flour and wheat flour. There is no exact recipe for street food, just experiment some.

No, I don't think so. I've seen two versions, one is a stick dough, and they roll it very fast on the hot plate to form the pancake. This result a very crispy jianbing. The other one is like crepe batter consistency, which is softer and more crepe like.

Those are specially made to cover the arms only, since usually that is the area easily to get dirty. In the case, one can just wash the pieces instead of washing the whole coat.
