I love these... it's like China's version of the hotdog in the sense of its ease of making yet you can still get a good one and a bad one and a really outrageously, awesomely, heavenly one! :) After I was introduced to these the first time, I couldn't resist going back for 2 or 3 per day! :)

I had "socca" near Nice, France, recently. It was initially a breakfast for poor street people and is really just water and chickpea flour cooked on an oiled pan in a superhot oven. Really good, and not too far away, in Livorno, Italy ("Leghorn") they eat "torto," which is the same thing but they allow the "gram flour" (chickpea flour) and water time to ferment & there is rosemary, olive oil, sea salt added. Ancient Estruscan food! Predates pizza made with wheat flour, e.g.

It's more often seen in northern provinces. Southern Chinese prefer something else in terms of fast & cheap street snack.

Social Sketch There are actually two kinds of ways to make jianbing. One is the way the video shows that it was made by a spinning wheel. Another way is more like a French crepe making, which was spinned by a wooden shovel.

As a Beijinger, I have to say it should be Shandong (another province in China) Jianbing. There are many shandong people come to Beijing to sell jianbing, so maybe you confused its origin. BTW, I love jianbing

He was a street vendor located near Dongzhimen subway station. But my friend in Beijing could not find him again. I suspect there are other street vendors selling the same thing all over Beijing. Just print out the picture and ask around.

I remember visiting China as a kid to see family and I hated how filthy the living conditions could get sometimes. But I have to say, there was a special sort of charm (and taste) from these street food vendors that you can't quite capture anywhere else in the world.

That red-orange sauce is a mixture of flour, water and egg. you get those kind of colour when u add salt to whisked egg and it doesn't have to be thick cause you'll only need a thin base. I guess you have never been in a kitchen before.

Eggs are very high in protein, having lettuce makes a difference in the amount of fiber and vitamins you get and soy sauce has less sodium than those canned soups you get or the soup bases you use. plus you have 3 of the 4 major food groups in that one crepe so i think it's pretty good.

You mean the chili sauce? Sauce usually look paint-ish on video, and it doesn't really help that the sauce is spread evenly with a brush instead of squirted out from a bottle.

it's supposed to be called as crisp fritter?..I'm not pretty sure about it, but it is a traditional snack in Beijing. Many people eat it as breakfast. It is mostly made from flour and peanut oil. It tastes crispy and a little bit salty. Some people will add more flavor to it, such as coconut, sesame. Sometimes, people will also put some filling with pork and vege in it. :)
