So why does "maths" have a plural name? Names of other subjects are singular: history, geography, English literature, phys ed, music, art, etc.

There are multiple parts of mathematics. Mechanics, Geometry, Trigonometrics, Statistics to name a few.

Sure you can detect patterns, and maybe predict certain behaviours with statistics, but you can only do so at a large scale. At smaller scales less can be said (or at any rate, things should be said with less confidence), and at the individual level mathematics is completely incapable of describing anything that makes us "human", in my opinion.

This is a great way to put it. Humans in large groups tend to follow predictable patterns, but the smaller the group, the more exceptions you’ll find.
